GROUND BEEF, VEGGIE & RICE BAKE

Ground Beef, Veggie & Rice Bake image

This is a great one-dish meal that gives you something different to do with that ground beef defrosting in your fridge.

Categories     One Dish Meal

Time 50m

Yield 8 serving(s)

Number Of Ingredients 12

1 cup long grain rice
2 lbs ground beef
2 stalks celery
1 large onion, chopped (1 cup)
1 medium zucchini (I use grilled peppers, 8 ounces)
2 medium tomatoes, chopped
2 cups milk
1 (4 ounce) can sliced mushrooms, drained
1 (3 ounce) package nacho cheese soup mix (2 envelopes)
2 teaspoons dried basil
1/4 teaspoon pepper
1 cup shredded cheddar cheese (4 ounces)

Steps:

  • Cook the rice according to package directions.
  • Meanwhile, in a large skillet cook ground beef, celery & onion until beef is brown & veggies are tender (drain fat).
  • Trim the ends from the zucchini & cut it in half lengthwise then slice crosswise. You can use any veggie(s) really, I like this with grilled peppers myself.
  • In a 13x9x2 inch baking dish combine meat mixture, rice, zucchini, tomatoes, milk, mushrooms, soup mix, basil & pepper (I tend to add chili powder too). Mix well.
  • Bake, covered, at 375 for 30-35 minutes or until heated through.
  • You may add the shredded cheddar during the last few minutes of cooking or use as a topping before serving.
  • Stir before serving.

Tips:

  • Use high-quality ground beef: Opt for lean ground beef with a fat content of 80/20 or 90/10 for a healthier dish.
  • Choose your vegetables wisely: Select vegetables that hold their shape well during cooking, such as broccoli, carrots, and bell peppers.
  • Don't overcrowd the pan: When cooking the ground beef and vegetables, make sure not to overcrowd the pan as this will prevent them from browning properly.
  • Season well: Use a combination of herbs and spices to add flavor to the dish. Some popular choices include garlic powder, onion powder, paprika, and cumin.
  • Don't overcook the rice: Cook the rice according to the package instructions to avoid mushy rice.
  • Use a baking dish that is large enough: Make sure the baking dish is large enough to accommodate all of the ingredients without overcrowding.
  • Top with cheese: Add a layer of shredded cheddar cheese or mozzarella cheese to the top of the casserole before baking for a cheesy crust.
  • Let it rest before serving: Allow the casserole to rest for 10-15 minutes before serving to allow the flavors to meld and the casserole to set.

Conclusion:

This ground beef veggie rice bake is a quick, easy, and delicious one-pan meal that is perfect for busy weeknights. It is packed with protein, vegetables, and rice, making it a complete and balanced meal. The casserole is also customizable, so you can add or remove ingredients to suit your taste. Whether you are looking for a comforting family meal or a simple dish to meal prep for the week, this ground beef veggie rice bake is sure to satisfy.
