4 (28 ounce) cans diced tomatoes
2 pounds lean ground beef
2 pounds chorizo sausage
2 tablespoons olive oil
2 large onions, chopped
3 cloves garlic, minced
3 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons lime juice
1 tablespoon salt
1 teaspoon ground black pepper
2 (15.5 ounce) cans black beans, rinsed and drained
1 (15.5 ounce) can pinto beans, rinsed and drained
1 (15.5 ounce) can small red kidney beans, rinsed and drained
1 large green bell pepper, chopped
1 large red bell pepper, chopped
1 large yellow bell pepper, chopped
14 ⅜ ounces frozen corn
1 dash hot sauce (such as Frank's RedHot ®), or more to taste
¼ cup chopped fresh cilantro, or more to taste

Steps:

  • Pour tomatoes into a large stockpot over medium heat.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
  • Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
  • Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. 1 -2 tablespoon brown sugar (optional)

3 cups cooked macaroni (can use less, cook the macaroni to JUST firm-tender)
4 cups shredded tex-mex cheese, divided (or to taste or cheddar cheese or mozzarella cheese)

Steps:

  • In a large skillet brown the beef with dried chili flakes, onion, garlic and the green pepper until the beef is no longer pink (about 10-12 minutes, make sure the beef is well browned) drain any fat.
  • Add in taco seasoning mix with Parmesan cheese; mix to combine and cook 1 minute.
  • Add in the cooked chopped bacon, tomato sauce, 2 cans tomato soup and brown sugar (if using); simmer for 30-40 minutes, stirring occasionally.

1 large onion, chopped
2 medium jalapeno peppers, seeded and chopped
1 pound lean ground beef
1 (28 ounce) can crushed tomatoes
1 (28 ounce) jar tomato sauce
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
1 tablespoon chili powder
1 teaspoon ground cumin

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add onion and jalapenos; saute until tender, 5 to 7 minutes. Transfer to a large pot.
  • Add ground beef to the same skillet; cook and stir over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

8 tablespoons Chili Seasoning, Divided
4 cloves Garlic
2 Medium White Onion, roughly choppped
1/3 cup Chicken Stock
2 cans Dark Red Kidney Beans, Drained
2 36oz cans Tomato Sauce
1 teaspoon Cocoa Powder
1/2 teaspoon Coriander
1 teaspoon Cinnamon
1 teaspoon Allspice
2 tablespoons Oregano
2 tablespoons Cumin

Steps:

  • Brown the brown beef in a large dutch oven over medium heat, adding the garlic and 2 tablespoons of the chili seasoning.
  • Once the beef is browned, drain and set aside.
  • In the dutch oven brown the onion for 5 minutes over medium heat. Add the chicken stock and stir.
