2 tablespoons milk
8 ounces cream cheese (softened)
½ cup sour cream

Steps:

  • Place salsa in a sieve to drain any liquid (this keeps your dip from getting runny).

2 tablespoons freshly squeezed lime juice (from 1 lime)

1 cup freshly grated Cheddar (about 4 ounces)

1 lb velveeta monterey jack pepper cheese
1/2 cup heavy cream
1 cup milk
3/4 cup pico de gallo
1/4 teaspoon cayenne pepper
1 tablespoon grated parmesan cheese
5 ounces frozen creamed spinach (Stouffers)

Steps:

  • Use a double boiler.
  • Cut cheese into cubes.
  • Place all ingredients EXCEPT spinich into double boiler and heat until melted through, stirring often.
  • Remove from heat and add spinich, stir well.

1 (11.5-oz) can of condensed bean & bacon soup
1 (1.25-oz) packet of taco seasoning -- your favorite
1/4 tsp hot taco sauce (or your preferred heat)
1 c sour cream
1 (4-oz) can chopped green chilies or chopped jalapeños, drained (depending on how spicy you want this)
1/2 c diced avocado
1 c shredded cheddar cheese or shredded mexican-blend cheese
1/2 c shredded lettuce
1/2 c chopped tomato

Steps:

  • 1. In a small bowl, combine the bean & bacon soup with the taco seasoning packet and the hot taco sauce; stir until well blended. On a large serving plate or platter, spread the mixture into approximately a 6" round.
  • 2. Spread the sour cream on top of the bean mixture, leaving approximately 1/2" of the bean mixture exposed (so you can see the bottom bean mixture all the way around).
  • 3. Layer the chilies, avocado, cheese, lettuce and tomato over the sour cream, leaving each layer a little exposed so you can see all seven layers of the dip.
