GRILLED TUNA

Grilled Tuna image

Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

Tips:

  • Select Properly: Choose fresh tuna steaks that are firm and have a vibrant red color. Avoid steaks that have brown or gray flesh.
  • Marinate Wisely: Marinating tuna steaks in a flavorful mixture can enhance their taste. Experiment with marinades made from olive oil, lemon juice, herbs, and spices.
  • Grill at High Heat: Grilling tuna steaks over high heat helps sear the exterior, resulting in a crispy crust while keeping the inside moist and tender.
  • Keep It Simple: Tuna steaks have a delicate flavor that can be easily overpowered by strong seasonings. Opt for simple seasonings such as salt, pepper, and a squeeze of lemon to let the natural taste of the fish shine through.
  • Don't Overcook: Tuna steaks cook quickly, so it's important to keep a close eye on them to prevent overcooking. Overcooked tuna becomes dry and tough.
  • Use the Right Tools: To ensure even cooking, use a fish spatula to gently flip the tuna steaks. Avoid using regular spatulas or forks as they can break the delicate flesh of the fish.
  • Rest Before Serving: After grilling, let the tuna steaks rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful bite.
