4 6-ounces swordfish steaks (each 1 to 1 1/2 inches thick)
2 tablespoons olive oil
2 1/2 teaspoons chopped fresh rosemary
6 tablespoons minced shallots
6 tablespoons dry white wine
3 tablespoons fresh lemon juice
1/2 cup (1 stick) chilled butter, cut into 8 pieces

Steps:

  • Prepare barbecue (medium-high heat). Brush fish with oil. Sprinkle with 2 teaspoons rosemary. Season with salt and pepper.
  • Combine shallots, wine and lemon juice in small saucepan. Boil until liquid is reduced to 2 tablespoons, about 5 minutes. Remove from heat. Add remaining rosemary. Add 1 piece of butter; whisk until melted. Place pan over low heat; add remaining butter, 1 piece at a time, whisking until each piece melts before adding the next. Remove from heat. Season with salt and pepper.
  • Meanwhile, grill fish until opaque in center, about 3 minutes per side. Serve with rosemary-white wine sauce.

1 medium orange bell pepper, thinly sliced
2 cups white wine
½ cup minced shallot

Steps:

  • Place swordfish in a 9x13-inch baking dish. Place bell pepper slices around the fish. Pour wine over top and sprinkle with shallots. Cover and marinate in the refrigerator for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Remove fish from the refrigerator.
  • Bake in the preheated oven, basting occasionally with the wine marinade, until fish flakes easily with a fork, 20 to 30 minutes.

2 swordfish steaks about 1-inch thick (about 1 1/2 to 2 pounds)
2 tablespoons olive oil
3 cloves garlic, unpeeled
1 pound tomatillos
2 jalapeno chilies, seeded and sliced
1 to 2 teaspoons sugar (or to taste)
1/3 cup dry white wine
1 tablespoon white-wine vinegar
2 tablespoons unsalted butter
Coarse salt and freshly ground pepper to taste
1/3 cup fresh coriander leaves
Coriander sprigs to garnish

Steps:

  • Cut the swordfish steaks in half. Wipe them dry with paper towels and coat them on both sides with the olive oil. Set aside.
  • Make the sauce. Boil the garlic for 10 minutes. Peel the cloves, mash them and set aside. Chop the tomatillos coarsely and put them in a saucepan with the chilies, sugar, wine and vinegar. Cook until soft, stirring frequently. Add the garlic. Taste to see if more sugar or vinegar is needed and season with salt and pepper. Add the butter to thicken the sauce.
  • Pour the sauce into a food processor with the garlic cloves and add the coriander leaves. Puree, taste and correct seasoning. Set aside.
  • Preheat broiler or coals. Broil the fish steaks six inches from the heat for about five minutes on each side or until cooked. Meanwhile, reheat the sauce.
  • To serve, pour some sauce on each of four individual plates. Put the steaks on top and sprinkle with coriander leaves.

1 habanero chile, seeded and thinly sliced
¼ teaspoon kosher salt
½ cup mayonnaise
1 tablespoon extra-hot prepared horseradish
2 teaspoons lemon juice
1 tablespoon apple cider vinegar, or to taste
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
2 (6 ounce) swordfish steaks
2 teaspoons olive oil
salt to taste
1 tablespoon sliced green onions

Steps:

  • Crush the habanero and kosher salt into a fine paste with a mortar and pestle before whisking in mayonnaise, horseradish, lemon juice, vinegar, white pepper, and garlic powder.
  • Strain sauce through a fine mesh strainer before using to remove the pepper skins and particles of horseradish. Set aside until needed.

This is a wonderful recipe for swordfish. I received this recipe from Bon Appetit magazine years ago. I have tweaked it to my liking and it always seems to get raves when I serve it in summer. It is a light entree for a summer terrace meal. I have both grilled and broiled the fish depending on the season. The sauce is a nice compliment to the dish.

4 swordfish fillets, 1 1/2 inch thick
2 tablespoons olive oil
2 teaspoons fresh rosemary, minced
1 tablespoon parsley
1/4 cup shallot, minced
1/3 cup dry white wine
3 tablespoons lemon juice
2 tablespoons fresh lemon zest, grated
1/2 cup butter, cut into pieces
4 sprigs rosemary

Steps:

  • In a sauce pan combine parsley, shallots, wine and lemon juice. Bring to boil and reduce to about 3 tablespoons.
  • Add 1/2 tsp of minced rosemary and lemon zest.
  • Reduce heat to low and add butter a piece at a time, and whisk to combine well.
  • Remove from heat and add salt and pepper to taste. Keep warm.
  • Sprinkle swordfish fillets with remaining minced rosemary, salt and pepper.
  • Grill, over medium heat, about 3-4 minutes per side. Remove from grill and let set several minutes.
  • To plate fish, smear a bit of sauce in center of each plate. Place fillet on top, then drizzle more sauce on top. Serve with a sprig of rosemary as garnish.

½ (12 ounce) bottle olive oil
¼ cup lemon juice
¼ cup soy sauce
2 tablespoons chopped fresh parsley
2 teaspoons minced garlic
