SPICY TOFU MARINADE
This is inspired by a recipe by Andrea Chesman, who has some wonderful grilling ideas for tofu in her book "The Vegetarian Grill." It makes enough marinade or dipping sauce for a pound of tofu.

GRILLED SPICY ASIAN TOFU
This is really good - no leftovers, even carnivorous children went back for seconds. The marinade provides subtle heat while the teriyaki glaze is sweet & smoky. Serve with Asian Grilled Vegetables (search for the recipe) and steamed rice or udon noodles. I use Sriracha Sauce for the marinade - green top, rooster on the bottle - stuff is the best and HOT! I use Kikkoman "Takumi Collection Spicy Miso " Teriyaki sauce to baste. Really good....

GRILLED TOFU
Pouring hot marinade over tofu slices encourages faster absorption of flavors, eliminating the need to marinate overnight. In a pinch, this method yields tasty results in three hours, but the recommended six hours deliver a much more complex, richer flavored tofu. Grilled, it makes a versatile side dish and is delicious warm or at room temperature. Pair it with steamed rice and a simple green salad, or turn the tofu into satisfying vegetarian sandwiches by tucking it into pita bread with lettuce and avocado.

Steps:
- Arrange sliced tofu in a single layer on a paper towel-lined plate. Press top with more paper towels to remove excess water. Arrange tofu in a 9-by-13-inch baking dish, or any shallow dish that can hold the tofu in one layer.
- In a small saucepan, combine oil, garlic and ginger over medium; bring to a simmer. Cook, stirring frequently, until softened and fragrant, 2 minutes. Add soy sauce, sugar, pepper and 1/4 cup water, and cook, stirring to dissolve the sugar, about 2 minutes.
- Pour hot marinade over tofu. Gently turn tofu slices to evenly coat, then cover dish tightly with plastic wrap to seal in heat. Refrigerate for 6 hours (or up to 8 hours), flipping tofu slices halfway through.
- Heat grill to medium and grease grates well (or heat a cast-iron grill pan over medium and lightly grease). Grill tofu over direct heat until golden and caramelized, about 3 minutes per side.
- Meanwhile, transfer marinade to a small saucepan over medium and warm through, 1 to 2 minutes. Stir in scallions.
- Transfer tofu to a serving plate and spoon over the sauce. Serve warm.
Tips:
- Choose the Right Tofu: Opt for extra-firm or firm tofu for grilling, as softer varieties tend to crumble.
- Press the Tofu: Pressing tofu removes excess water, resulting in a denser texture that holds up better on the grill.
- Slice Tofu Evenly: Consistent thickness ensures even cooking and prevents pieces from falling apart.
- Marinate Tofu: Marinating enhances flavor and adds moisture, making the tofu more tender and flavorful.
- Use a Flavorful Marinade: Experiment with different marinade ingredients like soy sauce, ginger, garlic, sesame oil, and spices.
- Grill Tofu Over Medium Heat: High heat can easily burn the tofu, so stick to medium heat for consistent cooking.
- Flip Tofu Carefully: Use a spatula to gently flip the tofu to prevent it from breaking.
- Cook Tofu Until Golden Brown: Grill the tofu until it develops a nice golden-brown color on both sides, indicating that it's cooked through.
- Let Tofu Rest: Allow the grilled tofu to rest for a few minutes before serving to let the flavors meld.
- Serve with Your Favorite Sides: Grilled tofu is versatile and can be served with a variety of sides such as rice, noodles, vegetables, or salads.
Conclusion:
With these tips, you can master the art of grilling tofu and create delicious, flavorful dishes that are perfect for any occasion.
