Time 1h30m

Yield 8

Number Of Ingredients 15

3/4 teaspoon saffron threads, if desired
4 large green onions, finely chopped (1/3 cup)
4 large cloves garlic, finely chopped
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 tablespoon sweet smoky Spanish paprika or any sweet paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
8 skinless salmon fillets (5 oz each)
1 can (14 oz) chicken broth
8 servings cooked instant brown rice
1 package (12 oz) fully cooked linguiça or andouille sausage links
4 medium plum (Roma) tomatoes, seeded, chopped
2 medium red bell peppers, diced 1/4 inch
1 cup lightly packed fresh Italian (flat-leaf) parsley, chopped

Steps:

  • Soak saffron in 2 teaspoons hot water; set aside 30 minutes.
  • To make salmon marinade, in small bowl, mix onions, garlic, lemon juice, 2 tablespoons of the oil, the paprika, salt and pepper. In 13x9-inch (3-quart) glass baking dish, arrange salmon; spoon marinade over salmon, turning to evenly coat. Cover; refrigerate 20 minutes.
  • Cut 8 (18x12-inch) sheets of heavy-duty foil. Grease with remaining 1 tablespoon oil.
  • Add water to broth to measure amount of water called for on rice package for 8 servings. Make 8 servings rice as directed on package, using broth and water mixture for the water.
  • Meanwhile, cut sausages in half lengthwise. Cut crosswise into thin slices; stir into rice along with tomatoes, bell peppers and saffron threads with soaking liquid. Use fork to mix ingredients and separate saffron.
  • Mound generous 1 cup rice mixture on center of each piece of foil. Top with 1 salmon fillet, and drizzle with a spoonful of marinade. Spoon any remaining marinade over fillets. Bring up long sides of foil together so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Heat gas or charcoal grill. Place packets on grill over low heat, allowing space around packets for circulation. Cover grill; cook 10 minutes for salmon that is opaque with a deeper pink center, or about 15 minutes until fish flakes easily with fork. Place packets on plates. Carefully unfold foil away from face. Sprinkle each serving with parsley.

GRILLED SALMON IN FOIL WITH HERBY GARLIC BUTTER

Grilled Salmon in Foil With Herby Garlic Butter image

This easy grilled salmon in foil recipe is totally foolproof, resulting in flaky fish with a garlic-herb butter sauce. And did we mention cleanup is a breeze?

Provided by Rachel Gurjar

Time 36m

Yield 2 Servings

Number Of Ingredients 8

1 Tbsp. honey
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
1 tsp. finely grated lemon zest
6 garlic cloves, finely chopped
4 Tbsp. unsalted butter, room temperature
2 Tbsp. finely chopped dill, plus more for serving
1 (1 lb.) boneless salmon fillet, preferably skin-on
4 Tbsp. fresh lemon juice, divided

Steps:

  • Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
  • Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
  • Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
  • Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.

Tips:

  • Choose the right type of salmon. For this recipe, it is best to use a firm-fleshed salmon such as sockeye, king, or coho. Avoid using softer varieties like pink or chum salmon, as they will flake apart too easily in the foil packs.
  • Cook the salmon to perfection. The salmon should be cooked through, but still moist and flaky. To test for doneness, insert a fork into the thickest part of the salmon. It should flake easily, but still have a slightly translucent center.
  • Use fresh vegetables. Fresh vegetables will add flavor and color to your paella. Avoid using frozen vegetables, as they will release too much water and make the paella soggy.
  • Don't overcrowd the foil packs. Make sure to leave some space between the salmon and vegetables so that they can cook evenly.
  • Use a good quality olive oil. Olive oil will add flavor and richness to the paella. Avoid using cheaper oils, as they can have a bitter taste.
  • Season the paella to taste. Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice for a bit of acidity.

Conclusion:

Grilled Salmon Paella Foil Packs are a delicious and easy way to enjoy this classic Spanish dish. This recipe is perfect for a weeknight meal or a special occasion. With a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will love. So next time you're looking for a quick and easy seafood dinner, give Grilled Salmon Paella Foil Packs a try. You won't be disappointed!
