Number Of Ingredients 13

For marinade
4 large garlic cloves, minced
4 tablespoons balsamic vinegar
4 tablespoons fresh lemon juice
3 tablespoons Dijon mustard
1 1/2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried oregano, crumbled
1 teaspoon dried basil, crumbled
1 teaspoon dried thyme, crumbled
1/2 teaspoon dried hot red pepper flakes

a 2-to-2 1/2 pound London broil

Categories     side-dish

Time 50m

Yield 8 to 12 servings

Number Of Ingredients 7

10 large cloves garlic, peeled but left whole
1 fresh rosemary sprig, 6 inches long
1/4 cup extra-virgin olive oil
1 stick unsalted butter, at room temperature
Salt and pepper
2 baguettes (not sourdough), 1/2 pound each
1/4 cup freshly grated Parmesan, optional

Steps:

  • Put the garlic, rosemary, and olive oil in a small skillet and heat slowly until the oil just begins to simmer. Turn the cloves over in the oil and saute for 10 minutes longer. Remove from the flame and let cool for 15 minutes.
  • Remove the garlic cloves from the oil (reserve the oil) and mash them to a paste with a knife or mortar and pestle. Take the leaves off the rosemary sprig and finely mince them. In a bowl, combine the garlic paste, minced rosemary, and butter and stir until smooth. Season with salt and pepper.
  • Cut the baguettes in half lengthwise. Spread the cut sides with the seasoned butter and drizzle with a little of the oil used to bake the garlic. Sprinkle with the Parmesan, close the baguettes back up and wrap each in aluminum foil. Cook over medium heat on the grill or in a bed of slow coals for 10 to 15 minutes. Cut into 2-inch-wide slices and serve immediately.

MARINATED GRILLED LONDON BROIL

Provided by Food Network

Categories     main-dish

Time 37m

Yield 4 servings

Number Of Ingredients 10

2 medium shallots, minced
1 tablespoon dried thyme leaves
3 tablespoons (packed) dark brown sugar
1/4 cup soy sauce
3 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1/3 cup vegetable oil
1 1/2 pounds London broil (top round)
1/4 cup water
2 tablespoons butter

Steps:

  • Combine the shallots, thyme, brown sugar, soy sauce, Worcestershire sauce, vinegar, and oil in a freezer-type zip-top plastic bag. Add the steaks. Squeeze out as much air as possible and seal the bag. Place the bag in a medium bowl in the refrigerator to marinate overnight, turning bag several times for even coating.
  • Heat a grill.
  • Drain the steaks, reserving the marinade. There will not be much. Pour the marinade into a small saucepan. Rinse the bag with 1/4 cup water and add to marinade. Simmer 4 to 5 minutes and stir in the butter.
  • Grill steaks to medium-rare, about 2 minutes each side.
  • Let stand 4 to 5 minutes before slicing. Thinly slice at an angle across the grain, which runs up and down the short side of the steak. Bring the marinade-butter mixture back to a boil, pour over the meat, and serve immediately.

Tips:

  • Choose a flank steak that is at least 1 1/2 inches thick for best results.
  • Use a sharp knife to score the steak against the grain to help it cook evenly and tenderize it.
  • Marinate the steak in the rosemary-soy marinade for at least 30 minutes, or up to overnight, to infuse it with flavor.
  • Preheat your grill to medium-high heat before cooking the steak.
  • Sear the steak for 4-5 minutes per side for a medium-rare steak, or cook longer for a more well-done steak.
  • Let the steak rest for 5-10 minutes before slicing it against the grain to serve.

Conclusion:

Grilled Rosemary Soy London Broil is a flavorful and tender steak that is perfect for a weeknight meal or a special occasion. The marinade infuses the steak with a delicious rosemary and soy flavor, and the grilling process gives it a nice smoky char. This dish is sure to be a hit with everyone at the table. Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
