2 teaspoons kosher salt
1 1/2 cups quick cooking polenta, medium or coarse-grain
1 teaspoon freshly ground black pepper
1 teaspoon freshly chopped thyme leaves
1 teaspoon freshly chopped marjoram leaves
2 tablespoons unsalted butter, plus more for pan
3/4 cup grated Parmesan
1/4 cup olive oil, for grilling or pan searing

Steps:

  • In a medium saucepan, over medium-high heat, bring the water and the salt to just a boil. Reduce the heat, slowly whisk in the polenta and season with pepper. Continue to whisk until the mixture starts to tighten up, about 3 to 4 minutes. Add the fresh chopped herbs, 2 tablespoons of the butter and the Parmesan. Continue to stir until well combined and very thick, taste for seasoning adjustment.
  • Liberally butter a 10-inch springform pan on the bottom and about 2-inches up the side. Pour in the hot polenta and with a rubber spatula, rubbed with butter, smooth out the top. Set aside to cool to room temperature, then cover with plastic wrap and refrigerate for 2 hours to set. (This can also be done up to 1 day ahead.)
  • Preheat a grill to medium.
  • When ready to grill, or pan fry, remove the polenta from the pan and cut it into equal pie shapes or cut circles with a biscuit cutter. Lightly oil a grill, brush each side of the polenta with olive oil and grill or pan sear until golden brown, about 3 minutes on each side. Arrange the polenta on a serving platter and serve hot.

  • In a large heavy saucepan, saute shallot in oil until tender. Add the basil, garlic and oregano; cook 1 minute longer. Stir in wine. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Add the broth, tomatoes and salt; bring to a boil. Reduce to heat to a gentle boil; slowly whisk in cornmeal. 1 lemon
4 tablespoons unsalted butter, at room temperature
2 to 3 teaspoons hot sauce
Kosher salt and freshly ground black pepper
1/4 cup lightly-packed fresh parsley leaves, roughly chopped
1/4 cup extra-virgin olive oil, plus more for oiling the grill grates
1 pint grape tomatoes (about 20)
1 tube prepared plain polenta (about 18 ounces), cut into twelve 1/2-inch rounds
1 pound large shrimp, peeled, deveined and tails removed

Steps:

  • Zest the lemon into a mixing bowl and add the butter, hot sauce and a pinch of salt. Stir until well combined. Gently stir in half of the parsley, reserving the remaining parsley for garnish. Cut the zested lemon into wedges and reserve.
  • Prepare a grill or grill pan or for high heat. Lightly oil the grill grates. Thread the tomatoes on the skewers, about 7 tomatoes per skewer. (If using wooden skewers, leave just 1/2 inch of the skewer sticking out on each end so you do not have to soak them). Brush 1 tablespoon of the oil on the tomatoes and sprinkle them liberally with salt and pepper.
  • Brush both sides of the polenta rounds with 1 tablespoon of extra-virgin olive oil. Sprinkle liberally with salt and pepper.
  • Arrange the skewered tomatoes on the hot grill and cook, turning occasionally, until they are lightly charred in spots and have started to burst, 12 to 15 minutes.
  • Meanwhile, arrange the polenta on the grill and cook until lightly charred with distinct grill marks, about 5 minutes per side, flipping once using a flat metal spatula. (Be careful not to flip the polenta too early because it will stick to the grill if it is not ready.) Remove from the heat and reserve.
  • Toss the shrimp with the remaining 2 tablespoons oil and sprinkle liberally with salt and pepper. Grill until lightly charred in spots on both sides and just cooked through, 2 to 3 minutes total. Remove from the heat and reserve.
  • By this time, the grape tomatoes should be ready to take off the grill as well. Carefully remove the tomatoes from the skewers and place directly into a small bowl. Use the back of a pair of tongs or a spoon to lightly smash the tomatoes so that they release their juices.
  • Place 3 pieces of polenta on each plate. In the center of the polenta, spoon a quarter of the tomatoes along with their juices, one quarter of the shrimp and a large dollop of the reserved butter mixture (if it doesn't melt, touch the business end of a pair of tongs to the grill, and then to the butter to finish melting). Garnish with the reserved parsley and wedges of lemon for squeezing on top of each serving.

Steps:

1 1/2 cups polenta
1 1/2 teaspoons salt
1 1/2 tablespoons unsalted butter
Extra virgin olive oil for grilling

Steps:

  • Preheat the oven to 350 degrees. Combine the polenta, 1 1/2 quarts water and salt in a 2-quart baking dish, and stir together. Place the baking dish on top of a sheet pan (so that if water sloshes when you put it in the oven, it will just go onto the sheet pan), and place in the oven. Bake one hour. Remove from the oven, stir in the butter and return to the oven for 20 minutes. Remove from the oven, and stir again. Return to the oven for 10 to 20 minutes, until stiff. Remove from the oven and allow to cool, then chill for one hour or more.
  • Prepare a medium grill or heat an electric griddle on medium. Cut the polenta into squares, and brush the squares on both sides with olive oil. Place on the grill or griddle. When grill marks appear or when nicely browned, usually in about two to three minutes, turn and brown the other side. Serve hot.

1 small garlic clove

Steps:

  • Make polenta:
  • Whisk together water, cornmeal, and salt in a 1-quart heavy saucepan and bring to a boil over moderate heat, whisking constantly. Reduce heat to low and cook, stirring frequently, until very thick, 15 to 20 minutes.
  • Spread polenta into a 10- by 5-inch rectangle on a lightly oiled baking sheet. Chill, uncovered, until firm, about 1 hour.
  • Prepare grill for cooking.

2/3 cup grated parmesan cheese, divided
1/8-1/4 teaspoon cayenne pepper

1 tablespoon olive oil
8 asparagus spears, ends trimmed
8 scallions, trimmed

  • Bring 3 cups water to a boil in a medium-sized heavy saucepan. Add polenta, whisking quickly to combine. 1 onion, finely diced (about 1 cup)

3 cups canned diced tomatoes, with juice
1 bay leaf

1/4 cup roughly chopped pitted black olives
4 anchovy fillets, rinsed and chopped
1/2 teaspoon red pepper flakes
Large eggs, for frying

Steps:

  • Paint tops of polenta squares lightly with olive oil. Heat a stovetop grill or cast-iron griddle. Lay polenta top-side down and cook until nicely browned and crisp, about 10 minutes. Flip and brown the other side. Keep warm.
  • For the sauce, heat 2 tablespoons olive oil in a heavy saucepan. Add onion and cook over medium heat until softened, about 5 minutes. Add garlic, season with salt and pepper, and cook for 1 minute more. Add tomatoes and bay leaf and simmer briskly for 5 to 8 minutes, until thickened slightly. 1 17- to 18-ounce tube polenta, cut into 12 rounds
4 6-ounce skin-on center-cut salmon fillets, preferably wild

Steps:

  • Preheat a grill to medium high. Toss the tomatoes with 1 tablespoon olive oil, the garlic, 3/4 teaspoon salt and a few grinds of pepper on a large piece of foil. Add the thyme sprigs and bring up the edges of the foil slightly. Pour in the wine and fold the edges together to form a packet; set aside.

  • Bring 4 cups water and salt to boil in heavy large saucepan. Gradually add polenta, whisking until boiling and smooth. Reduce heat to low. Grilled Chickpea Polenta Cakes with Chive Oil and Lemon image

Number Of Ingredients 14

2 tablespoons olive oil
1 Spanish onion, finely chopped
2 cloves garlic, finely chopped
2 cups canned chickpeas, rinsed and drained
8 cups chicken stock or water
Salt and freshly ground black pepper
2 cups polenta
1/2 cup olive oil
Chive oil, recipe follows
Finely grated lemon zest
Finely chopped fresh chives
1 cup chopped chives
1 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Heat olive oil in a large saucepan on the grates of the grill. Add the onions and garlic and cook until soft. Add chickpeas, stock and salt and pepper and cook until chickpeas are very soft. *Transfer mixture carefully, in batches, to a blender and blend until smooth. Return the mixture to the saucepan and bring to a boil. Slowly whisk in the polenta, stirring constantly, and continue whisking until mixture begins to bubble. Reduce heat to medium and continue cooking, stirring with a wooden spoon until the mixture is thickened and cooked, about 30 minutes. Season with salt and pepper, to taste.
  • Spread the mixture into a baking sheet, cover with plastic and place in the refrigerator until cold and very firm, about 4 hours. When the polenta is firm, remove from the refrigerator and, using a 2-inch ring mold, cut out circles of the polenta.
  • Preheat a grill to medium-high.
  • Season the polenta circles with salt and pepper on both sides, brush with oil and grill on both sides until golden brown, about 2 to 3 minutes per side. Remove from grill, drizzle with chive oil and garnish with lemon zest and chives.
  • Combine ingredients in a blender and blend for 5 minutes. Season with salt and pepper, to taste.

6 boneless skinless chicken thighs
2 limes, juice of
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
2 serrano peppers, seeded and chopped
1 pasilla chile, seeded and chopped
1 tablespoon chili powder
1 teaspoon ground cinnamon
2 teaspoons dried oregano
1 teaspoon ground cumin
1/3 cup A.1. Original Sauce
2 cups tomato sauce, from jar
3/4 cup low sodium chicken broth
1/4 cup chocolate chips
24 ounces of pre-cooked polenta
1 medium avocado

Steps:

  • Marinate chicken in a medium bowl with lime juice, salt and pepper for 1 hour.
  • While chicken is marinating: In a large pan, heat olive oil over medium heat. Add onion, garlic, serrano and pasilla peppers. Saute for 5 minutes.
  • Add chili powder, cinnamon, oregano and cumin. Stir for 1 minute.
  • Add A.1. Original Sauce, tomato sauce and chicken broth to pan. Bring to a boil, and add chocolate chips.
  • Stir well and reduce heat to medium-low. Let sauce simmer for 15 minutes, stirring occasionally.
  • Heat electric grill on High. Spray with non-stick cooking spray. Add chicken thighs (grill in two batches) and close grill. Grill until chicken is fully cooked through, about 15 to 20 minutes.
  • Remove chicken from grill. Slice polenta crosswise into 8 circles. Place polenta slices on grill. Close grill, and cook until golden and brown grill marks appear, about 8 minutes.
  • Plate grilled chicken and polenta slices. Spoon A.1. mole sauce over. Top with slices of avocado.

3 lemons (1 juiced, 2 halved)
1 teaspoon dijon mustard
2 tablespoons extra-virgin olive oil, plus more for brushing
1 pint grape or cherry tomatoes, halved
1 bulb fennel, trimmed, cored and very thinly sliced, plus 1/4 cup chopped fronds
Kosher salt and freshly ground pepper
4 6-ounce skinless center-cut salmon fillets (preferably wild)
1 teaspoon ground fennel seeds
1 14-ounce tube prepared polenta, sliced into 8 rounds
1 cup torn fresh basil

Steps:

  • Whisk the lemon juice and mustard in a large bowl. Gradually whisk in the olive oil until smooth. Add the tomatoes and sliced fennel and toss. Season with salt and pepper; set aside.
  • Preheat a grill to medium high and brush the grates with olive oil. Season the salmon on both sides with the ground fennel, salt and pepper. Brush the polenta rounds with olive oil. Grill the salmon and polenta until well marked and the salmon is just cooked through, 3 to 4 minutes per side. Meanwhile, grill the lemon halves cut-side down until marked, about 3 minutes.
  • Add the fennel fronds and basil to the fennel salad; toss. Serve the salmon with the polenta, fennel salad and grilled lemons.

I found this recipe in the Australian Woman's Day magazine. I made them as an appetiser for a dinner party and they were well received. They are quick and easy to make and can be prepared well before guests arrive. I added a whole avocado into the salsa because I love it. The only other change I would consider would be to use tomato in place of some or all of the capsicum in the salsa. I like capsicum, just not as a main ingredient! Cooking time includes the 3 hours chilling time.

2 cups chicken stock
2 cups water
1 cup polenta
1/2 cup parmesan cheese, finely grated
1/2 red capsicum, seeded and finely chopped
1/2 yellow pepper, seeded and finely chopped
1/2 avocado, stone removed, peeled, finely chopped
1/4 cup fresh coriander, finely chopped
2 limes, juice of

Steps:

  • Lightly grease and line an 18 x 28cm slice pan with baking paper.
  • In a large saucepan, bring stock and water to boil. Gradually add polenta, stirring constantly. Reduce heat and cook, stirring 5-10 minutes until polenta thickens.
  • Stir in cheese and season to taste.
  • Spoon the polenta mixture into prepared pan, smoothing top. Cool, then chill for 3 hours or overnight.
  • Once chilled, transfer polenta to a board. Using a 5cm round cutter, cut into 18 rounds.
  • Preheat char-grill or barbecue on high. Grease lightly with oil. Char-grill rounds for 3-4 minutes each side, until polenta is crisp and browned.
  • Meanwhile, to make the salsa, combine all the remaining ingredients in a medium bowl and season to taste.
  • Serve polenta topped with avocado salsa.

SQUID WITH GRILLED POLENTA AND COLLARD GREENS

2 pounds squid
3 tablespoons olive oil
1 onion
2 cloves garlic
1/2 teaspoon hot pepper flakes
1 cup dry white wine
2 cups Italian plum tomatoes, with their juice
1 cup polenta
1 large bunch collard greens
Snipped basil or Italian parsley to garnish
Coarse salt and freshly ground pepper to taste

Steps:

  • Clean the squid. Hold the sac with one hand and with the other reach inside and pull away the head and tentacles. With your fingers, scrape away the dark skin on the outside of the sac under cold running water. It will come away easily. Inside the sac is a transparent cartilage that acts as though it is made of plastic. Pull this out and discard it. Thoroughly rinse inside the sac. Cut the tentacles from the head above the eyes. Reserve the tentacles and discard everything else. Cut the squid in rings a quarter of an inch wide. Cut the tentacles in half. Rinse everything several times under cold running water.
  • Heat two tablespoons olive oil and gently sautee the onion, 1 clove garlic and pepper flakes until the onion is soft but not brown.
  • Add the squid. Add the wine and tomatoes and salt and pepper and cook for 45 minutes, covered, stirring occasionally.
  • Meanwhile, boil six cups water in a saucepan and add the polenta. Cook for three minutes, stirring frequently to get rid of all the lumps. Turn into a square or rectangular tin and cool. Preheat grill or broiler.
  • After the squid has cooked for 45 minutes, check the sauce. If it is very liquid, continue cooking uncovered for a further 15 minutes. If too dry, add a little water and cook covered.
  • Meanwhile, cut the stems from collard greens. Steam leaves five minutes or until wilted. Drain and refresh under cold water. Set aside.
  • Turn the polenta out of the tin, cut into slices about 2 by 4 inches, place on foil and broil on each side until lightly browned. While the polenta is browning, heat the remaining olive oil and lightly sautee the remaining garlic. Add the greens and stir-fry for three minutes. Place the squid in a heated serving dish and garnish with parsley or basil. Arrange the greens around the squid and place the polenta slices on top. Serve immediately.

2 2/3 cup milk
2/3 cup yellow stoneground, cornmeal
1 egg yolk
1/2 fresh jalepeno, chopped fine
1 papaya fresh, ripe or jarred
1 small red onion, sliced very thin
1 to 2 medium size tomatoes, seeded and small dice
1/2 cup of sliced scallions
1 small pineapple, cut into chunks or 1 can pineapple in natural juices (not syrup)
1 tablespoons of honey
Salt and pepper to taste
1/2 fresh jalepeno, chopped fine

Steps:

  • For the polenta: In a medium size sauce pan bring milk to a boil over medium high heat. Slowly add cornmeal, whisking in. Cook for 10 minutes, stirring constantly. Remove from heat and add yolk, jalapeno and cheese. Salt and pepper to taste. Put into a greased 9 by 5 by 3-inch pan. Cover tightly and refrigerate until firm, about 10 minutes. Cut into 24 pieces. Grill or saute to heat.
  • For the chutney: Combine above ingredients in a large bowl and refrigerate up to 1 hour or until ingredients absorb flavors. Spoon over polenta.

Polenta:
2 cups water
1/4 teaspoon salt
1 cup yellow cornmeal
1 cup lightly cooked corn kernels (I use frozen corn, thawed)
Olive oil for grilling
Sauce:
2 teaspoons olive oil
1 medium to large red onion, thinly sliced
4 - 8 cloves of garlic, minced
1 hot green pepper, cut in to 1 1/2 inch long slivers (jalapeno or poblano)
1 medium to large red bell pepper, cut into 1 1/2 inch slivers
2 - 12 sundried tomatoes, cut into thin slivers and soaked in boiling water 2 minutes
1/3 teaspoon coriander
1/2 teapsoon cumin
1/4 cup vegetable stock (could substitute chicken stock if you like)
1/4 - 1 cup cooked black beans, drained
salt to taste
2 - 3 tablespoons coarsely chopped fresh cilantro leaves

Steps:

  • Polenta: Lightly grease a glass or ceramic 8 inch square or 9 inch round baking dish (or any dish with approx. 64 square inches of area). In a heavy bottomed saucepan, heat water to boiling. Meanwhile, lightly toast the cornmeal in a dry (preferably iron) skillet. When water boils, add salt and gradually stir in cornmeal. Reduce heat to low and/or place pot on heat diffuser. (A double-boiler may also be used.) Cook polenta 30 - 60 minutes until creamy and tender. Stir from edge and add water as needed to keep from sticking. Stir in corn kernels about 5 minutes before done. Spread evenly in prepared pan. Set aside for about 30 minutes until set. Sauce: Saute onion in oil for about 2 minutes. Stir in garlic and hot pepper. Gradually add bell pepper and tomatoes. Saute until all vegetables are tender. Stir in spices. Cook another 30 seconds. Add beans and heat through. Add salt to taste. Cut polenta into squares and grill (in oven on oiled cookie sheet or on greased grill or in oiled skillet), turning once until light brown on both sides. Top with sauce and serve.
