1 (20 ounce) container fresh cored pineapple
1 medium lime, zested and juiced
1/4 cup honey
1/8 teaspoon ground cinnamon
1/4 cup fresh mint leaves, chopped for garnish (optional)

Steps:

  • Drain pineapple reserving 2 tablespoons of the juice. Place this pineapple juice in a 13 x 9" baking pan. Cut pineapple into 6 sliced rings, about 1/2 inch each.
  • Add the following to the pineapple juice in the baking pan: 1/2 teaspoon lime zest, 2 tablespoons fresh squeezed lime juice, 1/4 cup honey, and 1/8 teaspoon cinnamon; whisk together.
