Steps:
- For the pineapple: Slice the pineapple into 1-inch rounds and place in a large bowl.
- Mix together the lime juice, coconut rum, agave syrup and salt in a small bowl. Add the marinade to the pineapple and gently toss to coat. Cover and let marinate for at least 20 minutes.
- When ready, preheat a grill or grill pan over medium heat. Brush the grill with the olive oil and grill the pineapple for about 3 minutes per side; there should be noticeable grill marks, but it should still be firm in texture. Remove to a serving platter.
- For the whipped cream: Meanwhile, in the bowl of an electric mixer fitted with a whisk attachment, add the cream, agave syrup and the reserved lime zest. Whip until stiff peaks form, 2 to 3 minutes.
- To serve: Top the grilled pineapple with generous mounds of the whipped cream, scatter over mint leaves and drizzle with agave syrup.

Steps:
- In a large bowl, combine all-purpose, self-rising flour and salt. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of the mixture. Pour in 1 beaten egg and water. Bind the ingredients together gently. Do not knead too much. Shape dough into a ball, wrap in plastic and refrigerate for 4 hours or overnight.
- In a saucepan over medium heat, combine pineapple and sugar. Bring to a boil. Reduce heat and simmer, stirring frequently, for 30 minutes, or until mixture thickens. Remove from heat and allow to cool.
- Preheat the oven to 400 degrees F (200 degrees C).
- On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut 24 rounds, using a 2 inch round fluted cutter. Place on cookie sheet. Put a spoonful of pineapple jam in the center of each piece. Decorate with criss-cross strips of pastry over jam, extending slightly onto pastry shell.
- Cut 24 more 2 inch rounds, then, using a smaller cutter, cut out the centers, creating a ring shape. Moisten the edges of each pastry, and place the rings on top of each pastry shell. Brush the top of the pastry with beaten egg.
- Bake for 20 to 25 minutes in the preheated oven. Allow to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Tips:
- For a sweeter filling, use overripe pineapple. You can also add a tablespoon of honey or agave nectar to the filling mixture.
- If you don't have a grill, you can bake the pineapple tarts in a 350°F oven for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
- To make the chipotle cream, you can use either canned chipotle peppers in adobo sauce or dried chipotle peppers. If using dried peppers, rehydrate them in hot water for 30 minutes before using.
- The chipotle cream can be made ahead of time and refrigerated for up to 3 days. Bring it to room temperature before serving.
- Garnish the tarts with fresh raspberries and mint leaves for a pop of color and flavor.
Conclusion:
Grilled pineapple tarts with raspberries and chipotle cream are a delicious and unique dessert that is perfect for any occasion. The tart, sweet pineapple filling pairs perfectly with the smoky, spicy chipotle cream. These tarts are sure to impress your guests and leave them wanting more.
