As the summer sun shines brightly, there's no better way to celebrate the season's bounty than with a delightful grilled peaches and mock crème anglaise. This tantalizing dish combines the natural sweetness of peaches with the rich, creamy texture of a classic crème anglaise, making it a perfect dessert or afternoon snack. Grilled peaches exude a smoky, caramelized flavor that pairs wonderfully with the smooth, custard-like mock crème anglaise, creating a symphony of flavors in every bite. The grilling process intensifies the peach's natural sugars, resulting in a slightly charred exterior and a tender, juicy interior that bursts with flavor. Paired with the velvety mock crème anglaise, made with almond milk for a vegan twist, this dish offers a delightful balance of sweet and savory, making it an irresistible treat for any occasion.

Time 10m

Number Of Ingredients 2

2-3 peaches, sliced in two and pitted
2 tablespoons olive (not extra virgin) or vegetable oil, for coating

Steps:

  • Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

Time 10m

Yield 4 servings

Number Of Ingredients 5

4 ripe peaches, preferably freestone
1/4 cup sweet wine, such as Vin Santo, sweet sherry, or Beaumes de Venise
Freshly ground black pepper
1/4 cup crème fraîche
1/2 lime

Steps:

  • Cut peaches in half and use a spoon to remove the pits. Rub the peach halves together to release their juices, then place cut side down over direct heat, 6 inches from the coals, or over medium-high heat on a gas grill or indoor grill pan. Grill until peaches are lightly charred, soft, and warmed all the way through, 3-4½ minutes.
  • To serve, place the peaches on individual serving plates or one large platter. Drizzle with wine, then add freshly ground black pepper. Spoon dollops of crème fraîche over the peaches, then finish with freshly squeezed lime juice. Serve immediately.

SIMPLEST GRILLED PEACHES

Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Provided by Sam Sifton

Categories     barbecues, dessert

Time 10m

Yield 4 to 6 servings

Number Of Ingredients 2

4 to 6 peaches
Olive oil

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

Choose fruit with a fragrant aroma and flesh that yields a bit when pressed gently. If a peach has cuts or tan spots, or if it's rock-hard or mushy, don't buy it. Color has more to do with variety than ripeness.

Tips:

  • Choose ripe and firm peaches: Look for peaches that are slightly soft to the touch and have a sweet aroma. Avoid peaches that are too hard or have any bruises or blemishes.
  • Use a grill pan or outdoor grill: A grill pan will give the peaches a nice charred flavor, while an outdoor grill will add a smoky flavor. If you are using a grill pan, make sure to grease it lightly with oil to prevent the peaches from sticking.
  • Grill the peaches until they are slightly charred and tender: The peaches should be grilled for about 2-3 minutes per side, or until they have grill marks and are slightly softened. Be careful not to overcook the peaches, or they will become mushy.
  • Make the mock creme anglaise while the peaches are grilling: This will allow the flavors to meld and develop. To make the mock creme anglaise, simply whisk together the almond milk, cornstarch, sugar, vanilla extract, and salt in a saucepan over medium heat. Bring the mixture to a simmer and cook, stirring constantly, until it has thickened. Remove the saucepan from the heat and stir in the vegan butter.
  • Serve the grilled peaches with the mock creme anglaise: The grilled peaches can be served warm or at room temperature. Drizzle the mock creme anglaise over the peaches and enjoy!

Conclusion:

Grilled peaches with mock creme anglaise is a delicious and easy-to-make dessert that is perfect for summer. The peaches are grilled until they are slightly charred and tender, and the mock creme anglaise is rich and creamy. This dessert is sure to be a hit at your next party or gathering.
