Categories     Vegetable

Time 12m

Yield 2-4 serving(s)

Number Of Ingredients 7

2 medium zucchini
1 tablespoon olive oil
1 tablespoon Italian spices
1/2 teaspoon garlic powder
salt and pepper
1 (16 ounce) can Italian-style tomatoes
1/2 cup parmesan cheese

Steps:

  • Cut zucchini lenghtwise.
  • Brush with olive oil and sprinkle seasonings.
  • equally on all pieces.
  • Place cut side down on med-hot grill for 3 minutes. Turn 1/4 turn (do not flip) grill for another 3 minutes Flip and grill for about 5 more minutes. Zucchini should be soft, but not squishy.
  • Take off grill and cut into 1/2 in pieces. Toss with tomatoes and chesse and enjoy.

Tips:

  • Choose the right zucchini: Look for medium-sized zucchini that are firm and have smooth, unblemished skin. Avoid zucchini that are too large or have soft spots, as these will not grill well.
  • Slice the zucchini evenly: This will help them cook evenly on the grill. If the zucchini slices are too thick, they will take longer to cook and may not cook through. If they are too thin, they will cook too quickly and may become mushy.
  • Marinate the zucchini: Marinating the zucchini in a mixture of olive oil, herbs, and spices will help them flavor and prevent them from drying out on the grill.
  • Preheat the grill: A hot grill will help the zucchini sear quickly and evenly. If the grill is not hot enough, the zucchini will not cook properly and may stick to the grates.
  • Grill the zucchini in batches: Do not overcrowd the grill, as this will prevent the zucchini from cooking evenly. Grill the zucchini in batches, working in small groups so that they have enough space to cook properly.
  • Flip the zucchini halfway through cooking: This will help them cook evenly on both sides.
  • Serve the zucchini immediately: Grilled zucchini is best served immediately after cooking. You can sprinkle them with additional herbs, spices, or cheese before serving.

Conclusion:

Grilled Parmesan zucchini is a delicious and healthy side dish that is perfect for summer gatherings. It is easy to make and can be enjoyed by people of all ages. With its simple ingredients and vibrant flavors, this dish is sure to be a hit at your next barbecue or potluck.
