1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder

3 (4 ounce) fillets wild-caught skin-on mahi-mahi fillets
3 tablespoons olive oil
2 tablespoons lemon juice

Steps:

In the winter I make this dish in my oven or broiler. The amounts I gave are approximate. I use two cans of tomatoes when I want more 'bite,' only one can when I want less. I like a lot of garlic so I generally use a lot.

5 pounds skinned, deboned mahi mahi, cut into chunks
¾ (4.5 ounce) jar bottled minced garlic
½ cup butter, diced
1 large onion, diced
1 ½ lemons, juiced
½ cup dry white wine
1 ½ (10 ounce) cans diced tomatoes with green chile peppers
salt and pepper to taste
8 ounces shredded pepperjack cheese

Steps:

  • Preheat grill for high heat.

2 teaspoons soy sauce
1 teaspoon chili-garlic sauce

4 5- to 6-ounce skinless mahi mahi fillets
Freshly ground black pepper
4 Hawaiian or brioche buns, split
Mayonnaise, for spreading
Bibb lettuce leaves, sliced sweet onion and fresh pineapple slices, for topping

Steps:

  • Preheat a grill to medium high. Combine the ketchup, soy sauce, chili-garlic sauce and sesame oil in a small bowl; season with a pinch of salt and set aside. 1 to 2 teaspoons minced seeded serrano chile
4 tablespoons chopped fresh cilantro, divided

1/4 cup plus 2 tablespoons olive oil
2 tablespoons honey

1 small Spanish onion, halved and thinly sliced
1 large jalapeno pepper, thinly sliced
One 3-pound center-cut mahi mahi fillet
Canola oil, for brushing
1 tablespoon sweet paprika
2 1/2 teaspoons ground cumin
1 Hass avocado, halved, pitted, peeled and diced
1 small ripe mango, halved, pitted, peeled and diced
1/4 cup fresh cilantro leaves, plus more for garnish

Steps:

  • Whisk together the juice, 1/4 cup vinegar, 1/4 cup olive oil, honey, and salt and pepper to taste. Add the onions and jalapeno, toss to coat and let sit at room temperature while you grill the fish.
  • Heat a grill (gas or charcoal) to medium-high heat. Brush the fish on one side with canola oil and sprinkle with salt, pepper, the paprika and 2 teaspoons cumin. Flip, brush the second side with canola oil and sprinkle with salt and pepper. Add the remaining 2 tablespoons olive oil, the remaining1 tablespoon red wine vinegar, the remaining 1/2 teaspoon cumin, the cilantro, and salt and pepper and toss gently to combine. Scrape most of the onion mixture off the fish, spoon the mango mixture across the top, garnish with whole cilantro leaves and serve.
