Time 45m

Yield 6

Number Of Ingredients 7

aluminum foil
1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

GRILLED POTATOES

Crispy grilled potatoes are easy and a perfect side to any BBQ recipe. Golden outside, tender inside, with no boiling or clean up required!

Categories     Side Dish

Time 30m

Number Of Ingredients 9

1 1/2 pounds baby red potatoes (or baby gold potatoes)
1 teaspoon dried rosemary
1 teaspoon garlic powder
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried oregano
2 tablespoons extra virgin olive oil
Grated parmesan (optional for serving)
Chopped fresh herbs such as parsley (rosemary, or basil, optional for serving)

Steps:

  • Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
  • In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
  • Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
  • Preheat the grill to medium-high (about 375 to 400 degrees F).
  • Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
  • Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
  • Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
  • Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

Categories     Potato

Time 1h

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons butter
5 medium potatoes
1/4 cup chopped green onion
2 tablespoons grated parmesan cheese
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
3 slices bacon, crisp-cooked, drained and crumbled
2 tablespoons snipped fresh parsley or 1 teaspoon dried parsley
2 tablespoons snipped fresh dill or 1 teaspoon dried dill
2 tablespoons snipped fresh chives or 2 tablespoons dried chives

Steps:

  • Grease a 24 x 18 inch piece of heavy duty foil with 1 tablespoon of the butter.
  • Scrub and thinly slice unpeeled potatoes onto the center of the foil.
  • Sprinkle with the onions, cheese, salt, paprika and pepper.
  • Dot with remaining butter.
  • Enclose the potatoes in the foil and seal with a double fold enclosing the potatoes completely leaving head space for the steam to build.
  • Grill potato packet for 30 to 40 minutes, turning every 10 minutes or until potatoes are tender.
  • Before serving sprinkle potatoes with bacon, parsley, dill and chives.

Tips:

  • Choose the right type of potatoes: Waxy potatoes like Yukon Gold or Red Potatoes hold their shape better than starchy potatoes when grilled.
  • Scrub the potatoes thoroughly to remove any dirt or debris before boiling them. This will help the potatoes cook evenly.
  • Pierce the potatoes with a fork or knife before boiling them. This will help the steam escape and prevent the potatoes from bursting.
  • Boil the potatoes until they are tender but still slightly firm. Overcooked potatoes will be mushy and fall apart on the grill.
  • Cool the potatoes completely before wrapping them in foil. This will help prevent the foil from sticking to the potatoes.
  • Add your favorite seasonings and toppings before wrapping the potatoes in foil. Common seasonings include salt, pepper, garlic powder, and olive oil. You can also add vegetables like onions, peppers, and mushrooms.
  • Wrap the potatoes tightly in foil to prevent them from drying out on the grill.
  • Grill the potatoes over medium heat for 15-20 minutes, or until they are heated through and slightly charred.
  • Serve the potatoes immediately with your favorite dipping sauce or condiment.

Conclusion:

Grilled Foil-Wrapped Potatoes are a simple but delicious side dish that can be enjoyed all summer long. With just a few simple ingredients and a little bit of time, you can have a flavorful and satisfying dish that the whole family will love. So next time you're firing up the grill, don't forget to add a few foil-wrapped potatoes to the menu!
