1 1/2 pounds boneless, skinless chicken thighs, cut into 2-inch pieces
12 ounces smoked andouille sausage, cut into 1-inch-thick pieces
1 pint grape tomatoes
12 ounces finger-size fresh okra, stems trimmed (about 4 cups)
1 large sweet onion (about 12 oz.), cut into 1/4-inch-thick rings
1 medium-size red bell pepper, cut into 1-inch squares
1 medium-size poblano chile or green bell pepper, cut into 1-inch squares
1/4 cup pure olive oil
1 tablespoon Creole or Cajun seasoning, divided
12 (10-inch) metal skewers
1/4 cup ketchup, warmed
4 scallions, white and pale green parts only, chopped
Hot sauce (optional)

Steps:

  • Prepare a charcoal fire using about 6 pounds of charcoal briquettes; let burn until coals are completely covered with a thin coating of light gray ash, 20 to 30 minutes. Spread the coals evenly over grill bottom; place grate on grill, and heat until hot. (It is hot when you can hold your hand 5 inches above the grill surface for no longer than 3 or 4 seconds.) Or preheat a gas grill to high (450°F to 550°F).
  • Combine chicken, sausage, tomatoes, okra, onion, bell pepper, and poblano in a large bowl. Add oil and 2 teaspoons of the Creole seasoning, and toss to coat. Thread chicken, sausage, tomatoes, and okra, separately, onto 10-inch metal skewers. Thread bell pepper and poblano onto a 10-inch skewer. (You will end up with a skewer of chicken, a skewer of sausage, etc. The onions will go directly on the grill. You can use a metal grilling basket instead of skewers for the vegetables.)
  • Place chicken on grate over hottest part of grill; arrange sausage over slightly cooler heat. Arrange onions and the skewered vegetables at the edges of the grill. Grill, uncovered, turning once or twice, until chicken juices run clear and chicken is done, the sausage is heated through, and the vegetables are tender and slightly charred, 8 to 10 minutes. Remove meat and vegetables from skewers, and transfer with onion to a large bowl.
  • Add ketchup and scallions to grilled mixture in bowl, and toss together. Immediately cover tightly with plastic wrap or aluminum foil, and let stand until vegetables are slightly wilted, about 5 minutes. Remove plastic wrap from bowl. Stir to combine; sprinkle with remaining 1 teaspoon Creole seasoning and, if desired, hot sauce.

1 tablespoon Worcestershire sauce
1 teaspoon garlic powder

1 pound fully cooked kielbasa or Polish sausage, cut into 3/4-inch slices

Steps:

  • In a large resealable plastic bag, combine first five ingredients; add chicken and sausage. 1 beef flank steak (1 lb.), cut against the grain into 12 strips
4-1/2 tsp. A.1. Dry Rub Cracked Peppercorn, divided
1 lb. boneless skinless chicken breasts, cut lengthwise into 8 strips
1 lb. Italian sausage links, cut diagonally into 12 pieces
1/2 cup KRAFT Real Mayo
3 cloves garlic, minced, divided
1 can (15 oz.) black beans, drained
2 Tbsp. KRAFT Zesty Italian Dressing
1/4 cup finely chopped onions
2 Tbsp. chopped fresh parsley
2 navel oranges, each cut into 6 wedges

Steps:

  • Heat grill to medium-high heat.
  • Place bacon slices in single layer on paper towel-covered microwaveable plate; cover with second paper towel. Microwave on HIGH 3 min. or until partially cooked. (Bacon should be slightly limp.) Drain bacon; cool.

8 cherry tomatoes
1 green pepper, seeded and cut into 8 pieces an
1 red onion, peeled and cut into 8 pieces

creole seasoning, to taste
1/4 cup olive oil
3 tablespoons creole mustard
1 1/2 cups chicken stock
1/2 cup heavy cream
2 tablespoons butter

  • Preheat grill to medium high or preheat broiler.
  • Brush oil on all vegies and meat, and season with salt, pepper and creole seasoning.
  • Use 4 metal skewers. For each skewer use, 2 tomatoes, 2 pieces green peppers, 2 pieces of onion, 3 pieces of chicken, 3 pieces of andouille sausage. Thread the pieces randomly.
  • For the sauce: In a saucepan combine the stock and mustard. Bring to a boil, reduce heat and gently boil for 2 minutes or until reduced to 1/2 cup.
  • While sauce is reducing, place the skewers on the grill. Cook for about 5 minutes on one side and then turn them over and cook for about another 5 minutes or until chicken is no longer pink inside.
  • When the sauce is reduced to 1/2 cup, add the cream. Bring to a gentle boil, and reduce for another 2 minutes. Now whisk in the butter. Season to taste with salt and pepper and remove from the heat.
  • Place kabobs on a serving platter and drizzle with the sauce.
