Grilled Cipollini Onions: A Sweet and Savory Summer Treat

Cipollini onions, also known as pearl onions, are small, sweet, and slightly flattened onions with a mild flavor that becomes even more delectable when grilled. Their compact size makes them perfect for grilling whole, allowing them to caramelize and develop a smoky, slightly crispy exterior while remaining tender and juicy on the inside. This article presents three distinct recipes to tantalize your taste buds and elevate your grilling experience.

In the first recipe, we'll infuse cipollini onions with a vibrant marinade of olive oil, balsamic vinegar, dried oregano, and a touch of honey for a sweet and tangy flavor profile. These marinated gems are then grilled to perfection, achieving a delightful balance of flavors and textures.

The second recipe introduces a unique twist by stuffing the cipollini onions with a savory mixture of sausage, bread crumbs, and herbs. These stuffed onions are then wrapped in bacon and grilled, resulting in a burst of flavors and a satisfying crunch with every bite.

Last but not least, the third recipe offers a refreshing take on grilled cipollini onions by incorporating them into a vibrant salad. The grilled onions are combined with roasted red peppers, fresh arugula, crumbled feta cheese, and a zesty dressing, creating a colorful and flavorful side dish or light lunch option.

Time 23m

Number Of Ingredients 8

1 1/2 pounds cipollini onions
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon granulated sugar
1/2 teaspoon kosher salt
1/3 cup water
1/4 cup balsamic vinegar
1 teaspoon chopped fresh thyme or rosemary leaves

Steps:

  • Bring a saucepan of water to a boil. Drop in the onions and boil 2 minutes. Drain and cool slightly.
  • Use a small, sharp knife to slice off the top of the onions, then slip off the skins. Trim any hairy roots, but leave the stem end intact so that the onions don't separate. If the onions are larger than 1 1/2-inches diameter, slice into halves or quarters.
  • Heat the butter and oil in a medium (8-10-inch) nonstick skillet over medium-high heat. When the butter stops foaming and begins to smell nutty, add the onions to the pan. Cook 5 minutes, or until the onions are browned, stirring occasionally.
  • Sprinkle the onions with the sugar and salt. Pour the water and vinegar over them (the pan will sputter). Turn the heat down to medium and cover the pan. Cook 5 minutes.
  • Uncover the pan and continue cooking until the liquid in the pan looks syrupy and has large bubbles, another 2-3 minutes. Sprinkle with the thyme and serve.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Number Of Ingredients 5

Coarse salt
1 1/2 pounds cipollini onions or small shallots, peeled
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1/2 teaspoon finely chopped fresh thyme

Steps:

  • Bring 6 cups water to a boil in a medium saucepan; add salt. Boil onions until softened, about 4 minutes. Drain, and pat dry. Set aside.
  • Heat butter and oil in a large saute pan over high heat, stirring to combine, until butter melts. Add onions, and cook, stirring occasionally, until browned, about 4 minutes. Reduce heat to medium-low; add thyme, and season with salt. Cover, and cook until onions are tender, 4 to 5 minutes. Serve warm.

Tips:

  • To easily peel the cipollini onions, cut off the root end and score a shallow X into the bottom of each onion. Place the onions in a bowl of boiling water for 1-2 minutes, then transfer to a bowl of ice water. The skins should now slip right off.
  • If you don't have a grill, you can roast the cipollini onions in the oven at 425 degrees Fahrenheit for 20-25 minutes, or until tender and caramelized.
  • For a more flavorful dish, try marinating the cipollini onions in a mixture of olive oil, balsamic vinegar, garlic, and herbs before grilling.
  • Grilled cipollini onions can be served as an appetizer, side dish, or main course. They are also a great addition to salads, sandwiches, and pizzas.

Conclusion:

Grilled cipollini onions are a delicious and versatile dish that can be enjoyed in many different ways. They are easy to make and can be prepared in advance, making them a great option for busy weeknights.
