30 large jumbo shrimp, shelled and devined
2 tsp chipotle powder seasoning
2 tsp garlic powder
1/2 tsp cumin powder
1 tsp salt and black pepper
~~~~chipotle sauce~~~~
4 clove garlic
2 large jalapenos seeded and devined, chopped into chunks
1 medium seet vidalia onion cut into fourths
3 Tbsp fresh lime juice
1 large serranos cut into chunks
1/2 c cilantro chopped
2 Tbsp olive oil
1 Tbsp honey
3 large chipotles from the can with about all the juice from the can
1/2 tsp ground cumino
1/2 tsp salt & pepper

Steps:

  • 1. First season your cleaned shrimp on both sides with garlic powder ,chipotle powder or chipotle seasoning, salt, pepper, and cumin and set aside.
  • 2. In a large pyrex measuring cup I have a really big one; or a big deep ceramic dish put in quarted onions, cut peppers, two garlic cloves, save the other two. and pour about 1 cup water over everything. Nuke in the microwave for five minutes. Next take out drain water and pour the veggies in a blender, with the lime juice, honey, cilatro, olive oil, 2 remaining cloves garlic, chipotles and their juice from the can, cumino, salt and pepper, process until smooth; about 1 minute.
  • 3. Now take some wooden skewers and put five shrimp on each one. Stick skewer through the tail and across to the top off the shrimp. Do six wooden skewers with five to a skewer. (I hope I am spelling skewer right) With a pastry brush, brush each shrimp real well with the chipotle sauce front and back. if grilling outside lay each skewer on the grill and grill about 2 minutes on each side. If you are broiling lay across a large cookie sheet and set under the broiler for two minutes; take out turn over and do the other side two more minutes. Serve on top of your favorite rice along with fried sweet plantains and a fruity tamarind, mango and pinapple salsa. Such as I have in the picture above. Enjoy

1 1/2 pounds 16/20 shrimp, peeled and deveined (30 shrimp in total)
3 tablespoons adobo sauce from canned chipotles
3 tablespoons honey
1 tablespoon olive oil
2 scallions, sliced thin
2 limes, zested and then cut into wedges

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Skewer the shrimp onto 6 soaked wooden skewers, about 5 shrimp per skewer.
  • Whisk together the adobo sauce, honey, olive oil, half of the scallions and the zest of the limes in a small bowl until well combined. Brush the shrimp with some of the glaze and place on the grill.
  • Grill the shrimp for 2 minutes per side, brushing them with the glaze until they are slightly charred and just cooked through.
  • Transfer to a platter and garnish with the remaining scallions and the lime wedges.

1 1/2 pounds (about 4042) large shrimp, shelled and deveined
1 small can chipotle chiles in adobo, stemmed and wiped clean
1/2 cup vegetable oil
1/2 teaspoon freshly ground black pepper

Steps:

  • Place shrimp in large bowl. Place chiles in a blender or food processor fitted with the metal blade and puree. With the motor running, drizzle in oil until creamy emulsion is formed. Pour over shrimp in bowl and mix thoroughly to coat shrimp. Cover bowl and refrigerate for 12 hours. Soak 12 bamboo skewers in water 30 minutes. Preheat grill to moderately high.
  • Lay 6 to 7 shrimp on board in front of you, nestled together and flat, with tails all facing one direction and heads the other. Holding shrimp flat with the palm of one hand, insert one bamboo skewer one third of the way from one end. Insert another skewer parallel to the first, one third of the way from the other end, so as to create a flat panel of shrimp that can be turned easily. Repeat with remaining shrimp and skewers to form 6 skewers in all. Season each side of shrimp with pepper (the marinade is already salted). Brush grill well and wipe with oiled paper towel. Place shrimp skewers and grill 12 minutes per side until done. The center shrimp should be just opaque. Remove from grill and serve.

2 lbs medium shrimp, shelled and deveined
1 large white onion, chopped
3 garlic cloves, finely chopped
2 tablespoons unsalted butter
2 cups white mushrooms, sliced
2 roma tomatoes, chopped (about 2 cups)
1 teaspoon kosher salt
1 cup Mexican crema or 1 cup creme fraiche
1 -2 tablespoon chipotle chile in adobo
salt and pepper
shrimp broth (optional)

Steps:

  • Using a food processor or blender, combine cream and chiles, adding chipotles a little at a time to taste, and pulse until smooth. Set aside.
  • Melt butter in a large heavy skillet over medium heat.
  • Sauté the green onion, garlic, and salt until soft, about 5 minutes.
  • Add the sliced mushrooms and cook covered, about 3 minutes.
  • Add the tomatoes and bring to a simmer. Reduce heat and cook, an additional 5 minutes.
  • Add shrimp and simmer, covered until they begin to turn pink, about 2-3 minutes.
  • Add broth if additional liquid is needed. Add the chipotle cream and heat until cooked through, an additional 3-5 minutes.
  • Season with salt and pepper to taste.
  • Serve with warm corn tortillas, over rice, or with avocado.
  • Notes: To make broth, combine reserved shells with 2 cups of water and 1/2 teaspoon of salt and bring to a simmer. Continue to simmer over medium heat for 30 minutes. Strain and use broth as needed to add liquid to the dish or thin the cream sauce to desired consistency.

Camarones embarazados translates to pregnant shrimp, but these crustaceans aren't necessarily carrying roe. The catchy name is a play on words: "en vara" means on a stick, and "asado" means roasted, and together, "en vara asado" sounds like "embarazado." These shrimp are soaked with an adobo that becomes a crunchy crust when grilled. This take on the dish, which spread from Puerto Vallarta on the Pacific coast of Mexico to beaches all over the country, combines guajillo chiles and chiles de árbol with the surprising addition of Mexican chocolate. The chocolate rounds out the sharpness of the adobo and provides a caramelized finish. Simmered extra adobo is delicious for dipping the shrimp hot off the coals.

1 pound ripe tomatoes
4 dried guajillo chiles, stemmed and seeded
2 to 3 dried chiles de árbol, stemmed
3 garlic cloves, peeled
2 scallions, white and light green parts only, cut into 1-inch pieces
1 teaspoon dried oregano
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
2 tablespoons apple cider vinegar
2 tablespoons unsalted butter
2 ounces Mexican chocolate (see Tip), grated
1 teaspoon coarse kosher salt, more for seasoning
2 pounds large head-on shrimp or headless shrimp, with or without shells
Lime wedges, for serving

Steps:

  • In a medium saucepan, combine the whole tomatoes, guajillo chiles, chiles de árbol and garlic cloves, and cover with water by an inch or two. Bring to a boil over medium-high heat, then reduce heat to medium and simmer until the tomatoes are very soft and their skins start to break, 8 to 10 minutes. (The chiles should rehydrate and plump up.) Using a slotted spoon, transfer the solids to a blender, and add the scallions, oregano, allspice, cumin, thyme, vinegar, butter, Mexican chocolate and salt. (Discard the cooking water.) Purée until completely smooth, then scrape the adobo into a large bowl and let cool completely.
  • Place the shrimp in the bowl with the cooled adobo and toss to coat. Cover and refrigerate for at least 1 hour and up to 24 hours.
  • When ready to eat, take the shrimp out of the refrigerator. Prepare an outdoor charcoal or gas grill for direct grilling over high heat. Thread the shrimp onto skewers and place on a sheet pan. If using head-on shrimp or shell-on shrimp, insert the skewer where the head meets the body, thread the skewer through the body while straightening it out, then push it out through the tail end. If using peeled shrimp, thread the skewer through the tops and bottoms of the shrimp without passing it through the length of the bodies. Once all are skewered, generously douse the shrimp with more adobo (reserve some for serving) and sprinkle a bit of salt on top.
  • Scrape the remaining adobo into a small saucepan or skillet and set over medium heat. Bring to a simmer and continue simmering, stirring constantly, for 3 to 4 minutes. Scrape into a serving bowl and set aside.
  • Set the skewers on the hot grill grate. For head-on shrimp, cook, flipping once, until the shells have crisped, browned and achieved some charring, and the bodies have cooked through, 3 to 4 minutes per side. For headless shell-on shrimp, grill for about 3 minutes per side, and for peeled shrimp, about 2 minutes per side. (If using a gas grill, close the lid between flips.)
  • Transfer the skewers to a platter and serve with the reserved adobo sauce and lime wedges. Let everyone eat by dipping the shrimp in the adobo sauce and squeezing fresh lime juice on top. The shrimp can be eaten in their entirety - heads, shells, tails and everything in between - or peeled.
