Provided by Food Network Kitchen

Time 40m

Yield 4

Number Of Ingredients 11

Vegetable oil, for oiling the grill grates
1/4 cup fresh lime juice
3 garlic cloves, sliced
1 chipotle chile in adobo, coarsely chopped
Kosher salt and freshly ground black pepper
2 large boneless, skinless chicken breasts, cut into 1-inch pieces (about 1 1/2 pounds)
1 pound tomatillos, husked and rinsed
1/4 jalapeno
1/4 medium onion
4 sprigs fresh cilantro
Warm flour tortillas, for serving

Steps:

  • Preheat an outdoor grill to medium. Soak four 12-inch wooden skewers in water for at least 30 minutes.
  • Whisk the lime juice, 2 cloves garlic and chipotle together in a medium bowl. Season with salt and pepper. Add the chicken, toss well to coat, and set aside for 20 minutes to marinate.
  • Meanwhile, put the tomatillos in a medium saucepan and cover with water. Bring to a boil and cook until tender, about 7 minutes and then drain. Puree the jalapeno, onion, the remaining 1 clove garlic and 1 teaspoon salt in a blender until smooth. Add the cooked tomatillos and cilantro sprigs and puree until smooth.
  • Remove the chicken from the marinade and thread onto the soaked skewers. Lightly oil the grill grates. Grill the chicken, flipping often, until cooked through, 4 to 6 minutes. Serve with the salsa verde and warm tortillas.

Number Of Ingredients 3

4 chicken breast halves
Coarse salt and ground pepper
1/3 cup Classic Barbecue Sauce

Steps:

  • Heat grill to medium-high. Season chicken breasts with salt and pepper. Clean and lightly oil hot grates. Place chicken on grill (if using skin-on chicken, place skin side down on grill).
  • Grill chicken, without turning, 6 to 10 minutes for boneless chicken and 10 to 14 minutes for bone-in. Flip and grill until cooked through, or a thermometer inserted in the thickest part of meat (avoiding bone) registers 160 degrees, 8 to 10 minutes more.
  • About 1 minute before chicken is done, brush with barbecue sauce.

Tips:

  • Choose the right chicken: Use boneless, skinless chicken breasts or thighs for best results.
  • Marinate the chicken: Marinating the chicken in the salsa barbecue sauce for at least 30 minutes, or up to overnight, will help to infuse it with flavor.
  • Preheat the grill: Preheat the grill to medium-high heat before cooking the chicken. This will help to prevent the chicken from sticking to the grates.
  • Cook the chicken over indirect heat: If your grill has a two-zone cooking area, cook the chicken over indirect heat. This will help to prevent it from drying out.
  • Use a meat thermometer: Use a meat thermometer to check the internal temperature of the chicken. Cook the chicken until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest: Let the chicken rest for a few minutes before slicing and serving. This will help the juices to redistribute throughout the chicken.

Conclusion:

Grilled chicken with salsa barbecue sauce is a delicious and easy-to-make dish that is perfect for summer cookouts. With just a few simple ingredients, you can create a flavorful and juicy chicken dish that everyone will love. Serve the chicken with your favorite sides, such as grilled vegetables, rice, or potatoes.
