AVOCADO-TOMATO GRILLED CHEESE SANDWICH

Avocado-Tomato Grilled Cheese Sandwich image

I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

Yield 4 serving(s)

Number Of Ingredients 9

1 ripe avocado, halved, seeded and peeled
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/2 teaspoon finely minced parsley
8 slices bread (I use whole grain)
6 ounces monterey jack cheese, sliced
1 large tomatoes, thinly sliced
2 tablespoons butter, softened

Steps:

  • In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley and set aside.
  • Top four of the bread slices with cheese; spread with avocado mixture and top with tomato slices. Add the four remaining bread slices on top. Using 1 tablespoon of the softened butter, spread some on the top of each sandwich.
  • Heat a large nonstick griddle or 12-inch skillet, over medium-high heat. Add sandwiches, buttered sides down. Carefully spread the remaining softened butter over the top of each sandwich.
  • Cook 4-6 minutes or until toasted, turning once.

Time 20m

Yield 2 serving(s)

Number Of Ingredients 9

4 slices white bread
75 g tasty cheese, grated
1 tomatoes, sliced (I used vine-ripened)
1 avocado, sliced
1 onion, thinly sliced
4 olives, sliced (I used green olives with lemon pepper)
sea salt & freshly ground black pepper
oil
butter

Steps:

  • Heat oil in pan over med-low heat (or use non-stick pan)and fry onion until soft and lightly browned, adding tomato slices for the last minute or two of cooking time.
  • Meanwhile, divide avocado equally between two slices of bread, buttering the other two slices if desired.
  • Add all other ingredients except butter, then place second slice of bread on top pressing lightly to flatten sandwich a bit.
  • Wipe out pan (or use separate pan) and add a little butter.
  • After butter has melted, fry sandwiches until crisp and golden brown on both sides.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the sandwich will be. Look for ripe tomatoes, creamy avocados, and flavorful cheese.
  • Don't overcrowd the pan. If you're making multiple sandwiches, cook them in batches so that they have enough room to cook evenly.
  • Cook the sandwich over medium heat. This will help to prevent the bread from burning and the cheese from overcooking.
  • Flip the sandwich halfway through cooking. This will ensure that both sides of the sandwich are cooked evenly.
  • Don't overcook the sandwich. The cheese should be melted and gooey, but the bread should not be crispy or brown.
  • Serve the sandwich immediately. Grilled cheese sandwiches are best when served hot and fresh.

Conclusion:

The grilled cheese tomato avocado sandwich is a delicious and easy-to-make sandwich that is perfect for lunch, dinner, or a snack. With just a few simple ingredients, you can create a sandwich that is both flavorful and satisfying. So next time you're looking for a quick and easy meal, give this sandwich a try.
