- In a large bowl, combine beef, Worcestershire sauce, garlic powder, salt, pepper and liquid smoke if desired, mixing lightly but thoroughly. Shape into four 4-in. square patties., In a large nonstick skillet, cook burgers in oil over medium heat until a thermometer reads 160°, 4-5 minutes on each side. Remove and keep warm., In the same skillet, heat 1 tablespoon butter over medium-high heat. Add onion; cook and stir until tender, 6-8 minutes. Remove and keep warm. - To make the sauce: Place the mayonnaise, sour cream, basil, scallion, garlic, Worcestershire sauce, salt, and pepper in the bowl of a food processor and puree until creamy and pale green. Transfer to a small bowl, cover with plastic wrap, and refrigerate until you are ready to use it.
- To make the burgers: Heat a charcoal or gas grill to medium-high. Divide the ground beef into 4 equal pieces and gently form into patties.
