1 beef Top Sirloin Steak boneless, cut 1 inch thick (about 1-1/4 pounds)
1 medium yellow squash, sliced (1/2-inch)
1 medium zucchini, sliced (1/2-inch)
1 small red onion, cut into 1/2-inch thick wedges
8 medium mushrooms
1 tablespoon Dijon-style mustard
1 tablespoon olive oil
2 tablespoons Dijon-style mustard
2 tablespoons apricot preserves
1 teaspoon lemon juice
1/2 teaspoon dried thyme leaves
1/4 teaspoon black pepper

Steps:

  • 1)Combine glaze ingredients in 1-cup glass measure. Microwave on HIGH 45 seconds, stirring once. Brush on beef steak. 2)Alternately thread vegetables onto four 12-inch metal skewers. Combine mustard and oil; brush on vegetables. 3)Place steak and skewers on grid over medium, ash-covered coals. Grill steak, covered, 11 to 15 minutes (over medium heat on preheated gas grill, 13 to 16 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill vegetables 6 to 10 minutes or until tender, turning occasionally. 4)Carve steak; season with salt. Serve with vegetables.

3 tablespoons light brown sugar
3 tablespoons distilled white vinegar
½ teaspoon garlic powder
½ teaspoon seasoned salt
½ teaspoon garlic pepper seasoning
4 fluid ounces lemon-lime flavored carbonated beverage
2 pounds beef sirloin steak, cut into 1 1/2 inch cubes
2 green bell peppers, cut into 2 inch pieces

1 pint cherry tomatoes
1 fresh pineapple - peeled, cored and cubed

Steps:

  • In a medium bowl, mix soy sauce, light brown sugar, distilled white vinegar, garlic powder, seasoned salt, garlic pepper seasoning, and lemon-lime flavored carbonated beverage. Reserve about 1/2 cup of this marinade for basting. Place steak in a large resealable plastic bag. Cover with the remaining marinade, and seal. Refrigerate for 8 hours, or overnight.
  • Bring a saucepan of water to a boil. Add green peppers, and cook for 1 minute, just to blanch. Drain, and set aside.
  • Preheat grill for high heat. Thread steak, green peppers, mushrooms, tomatoes, and pineapple onto skewers in an alternating fashion. Discard marinade and the bag.
  • Lightly oil the grill grate. Cook kabobs on the prepared grill for 10 minutes, or to desired doneness. Baste frequently with reserved marinade during the last 5 minutes of cooking.

A recipe that I saw on "Paula's Best Dishes", which I can't wait to try, looks so good. I am now making it for the 4th time, we love it!! I don't make kabobs out of the steak, just marinate it whole, then I baste it with the butter/beef bouillon mixture as well as the onions.

1/3 cup apple cider vinegar
8 garlic cloves, minced
2 tablespoons grated parmesan cheese
1 lemon, juiced
1 teaspoon paprika
1 teaspoon sugar
1 teaspoon house seasoning, recipe follows
1/2 teaspoon dried oregano
2 lbs beef sirloin, trimmed and cut into 2-inch cubes
4 tablespoons butter, melted
1 teaspoon beef bouillon granules
6 -8 bamboo skewers, soaked in water for 1 hour
4 large vidalia onions, cut into 2-inch cubes

Steps:

  • In a shallow dish, whisk together the vinegar, garlic, Parmesan, lemon juice, paprika, sugar, House Seasoning, and oregano. Add the beef cubes and marinate, covered, for 1 hour.
  • Light the grill or preheat the broiler. In a bowl, add the melted butter and bouillon and stir until the bouillon is completely dissolved.

4 tablespoons Irvine Spices Smokey Rotisserie Blend Seasoning
