In the vast culinary landscape, few condiments can match the versatility and vibrant flavor of green sauce. This tangy, herbaceous sauce, also known as salsa verde, has its roots in Italian cuisine, where it is traditionally served with grilled meats, fish, and vegetables. Its vibrant green hue comes from a blend of fresh herbs, such as basil, parsley, and mint, which are combined with olive oil, capers, and anchovies to create a condiment that is both flavorful and aromatic. While the classic Italian green sauce is a culinary treasure, there are countless variations that have emerged across the globe, each adding a unique twist to this versatile sauce. From the spicy chimichurri of Argentina to the creamy green goddess dressing of American cuisine, green sauces offer a diverse range of flavors that can elevate any dish. This article presents a collection of green sauce recipes that showcase the versatility and global appeal of this culinary delight. From the traditional Italian salsa verde to the piquant Argentinian chimichurri, from the creamy American green goddess dressing to the refreshing Thai green sauce, these recipes provide a culinary journey that will tantalize your taste buds and add a burst of flavor to your meals.

TRADITIONAL-STYLE NEW MEXICO GREEN CHILE SAUCE
Every New Mexican cook has a green chile sauce, but it has to be very good sauce, or her reputation as a good cook suffers. They serve this sauce at any meal. At breakfast it is served over eggs or potatoes. It is used over burritos, in enchiladas, or over grilled meats and roasted potatoes for lunch or dinner. It is best when it is fresh or used within one day of being made. This recipe comes from Sandy Szwarc's "Real New Mexico Chile".

Steps:
- For the green beans almondine: Place a large pot of salted water over high heat and bring to a boil. Working in batches (to avoid crowding the pot and slowing the return a boil), cook the green beans for about 3 minutes, or until al dente. With a slotted spoon or tongs, transfer the green beans directly to an ice-filled bowl and shock to stop cooking. Drain well.
- Heat the butter in a large skillet over medium-high heat until foaming and beginning to smell nutty. Add the blanched green beans and toss to coat. Add the toasted almonds and season with salt and pepper.
- For the Mornay sauce: Melt the butter in a medium pot over medium heat. Sprinkle in the flour and mix with a wooden spoon to make a roux--it should look like wet sand. Cook, stirring, for a couple minutes and then whisk in milk. Bring to a simmer, stirring and scraping the bottom and scorners of the pan, and cook for a few minutes. Season with some salt, pepper and nutmeg. Remove from the heat and add the Gruyere, stirring until fully melted and combined.
- For the crab-stuffed flounder: Preheat the oven to 375 degrees F. Melt the butter in a skillet over medium-high heat. Add the shallots, garlic and celery; cook until softened, 4 to 5 minutes.
- Deglaze the pan with the vermouth and hot sauce to taste, and let cook for another minute. Pour the vegetables into a medium bowl and add the breadcrumbs, thyme and Old Bay; mix to combine. Gently fold in the crabmeat. Add salt and pepper to taste.
- Rinse and pat dry the flounder fillets and lay on a baking sheet. Spread the stuffing along half of each fillet and fold over to enclose. Dot evenly with butter and sprinkle with salt and pepper. Bake until cooked through, 25 to 30 minutes
- Set the stuffed flounder on serving plates and top with Mornay sauce. Serve with the green beans on the side.

Steps:
- Blend tomatillos, poblano peppers, jalapeno peppers, onion, chicken broth, and garlic in a food processor or an electric blender in batches.
- Pour blended mixture into a large stockpot and add cilantro, lime juice, oregano, and seasoned salt. Bring to a boil over high heat; reduce heat and let simmer for 20 minutes.

- Pack sauce into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 25 minutes.
- Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Steps:
- In a mixing bowl, whisk together the egg whites, sesame oil, and 1 tablespoon of the cornstarch until foamy; season with salt and pepper. Add the beef and chives, toss to coat in the marinade and stick it in the refrigerator for 30 minutes.
- Pour the peanut oil in a large skillet or wok and place over high heat. When the oil is smoking hot, add 1/2 of the beef. Very carefully drain all but 2 tablespoons of the hot oil into a safe container.
- Stir-fry the ginger, garlic, green onions, and chile in the remaining oil until they perfume. Add the green beans; season with salt and pepper. Stir-fry the beans for 2 minutes until crisp-tender; remove from the pan. Mix the chicken broth with the remaining tablespoon of cornstarch to make a slurry and add it to the pan. Add the soy sauce, vinegar, sugar, peanut butter, and orange peel. Simmer until the sauce is thick, about 5 minutes. Return the beef and green beans to the pan, tossing to coat in the sauce. Garnish with chopped peanuts and serve with rice.

Steps:
- Cook the onion in oil in a heavy saucepan until tender, about 5 minutes.
- Add the garlic and cook until fragrant, then stir in the flour and cook for 1-2 minutes more.
- Add the chiles, then whisk in the stock and the seasonings.
- Bring the sauce to a boil, then reduce heat and simmer about 15 minutes until thickened but still pourable.
- May keep refrigerated for up to 5 days; freezes well.
Tips:
- Choose the right herbs: The most common herbs used in green sauce are parsley, basil, chives, and tarragon. You can also use other herbs like cilantro, dill, or mint, depending on your preference.
- Use fresh herbs: Fresh herbs will give your sauce the best flavor. If you don't have fresh herbs, you can use dried herbs, but they won't be as flavorful.
- Chop the herbs finely: Finely chopped herbs will distribute their flavor more evenly throughout the sauce.
- Use a good quality olive oil: The olive oil you use will make a big difference in the flavor of your sauce. Choose a good quality extra virgin olive oil.
- Season to taste: Green sauce should be seasoned with salt, pepper, and lemon juice. You can also add other seasonings like garlic, shallots, or capers.
Conclusion:
Green sauce is a versatile sauce that can be used on a variety of dishes. It's great on pasta, chicken, fish, vegetables, and eggs. It can also be used as a dipping sauce or a marinade. With its bright, herbaceous flavor, green sauce is a great way to add some freshness to your meals.
