½ pound applewood-smoked bacon
½ large white onion, sliced lengthwise
4 cloves garlic, minced
4 cups chicken broth
2 pounds fresh green beans, trimmed
2 pounds red potatoes, cut into chunks

Categories     Potato     Side

Yield 8 servings

Number Of Ingredients 6

3 lbs Yukon Gold potatoes, peeled, cut into 1 1/4 inch cubes
1 cup whipping cream
1 stick butter
2 tbsp wasabi paste
2 tbsp sesame oil
1 cup green onions

Steps:

  • Bring potatoes to boil in a large pot of water. Reduce heat to medium; cook until tender about 17 minutes. Bring cream, butter, and wasabi paste to a simmer in small saucepan over medium heat, stirring until butter melts. Season with salt and pepper. Keep hot. Heat oil in small skillet over medium heat. add green onions and saute until wilted about 3 minutes. Set aside. Using potato masher, mash potatoes. Stir in hot cream mixture. Season with salt and pepper. Stir in green onions.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet potatoes, and are therefore less likely to fall apart during cooking.
  • Slice the potatoes evenly: This will help them cook evenly. If the potatoes are not sliced evenly, some pieces may be overcooked while others are still undercooked.
  • Use a large skillet: This will prevent the potatoes from overcrowding and ensure that they cook evenly.
  • Do not overcrowd the skillet: If you overcrowd the skillet, the potatoes will not cook evenly. Cook the potatoes in batches if necessary.
  • Cook the potatoes over medium heat: This will help them cook through without burning.
  • Stir the potatoes occasionally: This will help them cook evenly and prevent them from sticking to the skillet.
  • Season the potatoes with salt and pepper: This will help them taste their best.
  • Add the green onions at the end of cooking: This will help them retain their color and flavor.
  • Serve the potatoes immediately: They are best enjoyed hot out of the skillet.

Conclusion:

Green onion potatoes are a simple but delicious side dish that can be enjoyed with a variety of meals. They are easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make sure that your green onion potatoes turn out perfectly every time.
