2 pounds tomatillos (husked and rinsed)
2 poblano peppers (stemmed and sliced in half lengthwise)
3-4 jalapeno peppers (stemmed and sliced in half lengthwise)
2 tablespoons olive oil
3 pound boneless pork shoulder (cubed (do bite sized cubes))
2 tablespoon ancho chili powder (optional)
1 teaspoon cumin (optional)
Salt and pepper to taste
1 large onion (chopped (white or yellow))
4 cloves garlic (chopped)
1 tablespoon Mexican oregano
½ - 1 cup chicken stock
½ cup chopped cilantro
Juice from 1 large lime
Extra limes (sliced jalapeno peppers, fresh chopped cilantro, crumbly white cheese, spicy chili flakes)

Steps:

  • Make your verde sauce first. Preheat your oven to broil.
  • Slice the peeled and rinsed tomatillos in half through the horizontal center (not up and down) and arrange on a lightly oiled baking dish with the skin sides up.
  • Place the peppers on a separate lightly oiled baking sheet skin sides up.
  • Bake the peppers and tomatillos about 12-15 minutes until skin side is blistering on both the tomatillos and peppers. Rotate the baking sheets if needed. You may need up to 20 minutes, depending on your proximity to the heat element.
  • Remove from heat and cool slightly. Peel off the pepper skins and discard them. You can peel off the tomatillos skins if you'd like, but I leave them on.
  • Add the tomatillos and peppers to a food processor. Process until smooth. Set aside for now.

1 tablespoon olive oil
1 ½ pounds cubed pork stew meat
salt and pepper to taste
1 large yellow onion, diced
4 cloves garlic, minced
2 cups chopped, roasted green chiles
1 (14.5 ounce) can diced tomatoes with juice
1 ½ cups tomatillo salsa
5 cups chicken broth
½ teaspoon dried oregano
1 pinch ground cloves

Steps:

  • Heat the olive oil in a Dutch oven or large pot over medium-high heat. Season the pork with salt and pepper to taste, then place into the hot oil. Cook until golden brown on all sides, about 7 minutes. Once browned, remove the pork and set aside. Reduce heat to medium, and stir in the onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Return the pork to the pot, and stir in the green chiles, diced tomatoes with juice, tomatillo salsa, and chicken broth. Season with oregano and clove. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
  • After 20 minutes, remove 2 cups of the soup (ensure there are no pork cubes in it), and pour into a blender. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree until smooth, then pour back into the cooking pot. This will create a thicker texture for your chili and will eliminate some of the chunky bits of chiles. Continue to simmer, stirring occasionally until the pork is very tender, at least 35 minutes more.

2 tablespoons canola oil
3/4 cup finely diced Spanish onion
1/2 large jalapeno, seeded and minced
1 clove garlic, chopped
4 tablespoons flour
1 (27-ounce) can roasted green chiles, chopped, juices reserved
1/2 cup white vinegar
2 teaspoons sea salt
1 teaspoon fresh cracked black pepper
2 tablespoons fresh lime juice

Steps:

  • In a small Dutch oven over medium-high heat, add the oil. When hot, add the onions and jalapeno and saute until just starting to caramelize, 4 to 5 minutes. Add the garlic and cook 1 minute more.
  • Reduce the heat to medium, sprinkle the onion mixture with the flour and stir constantly until lightly browned, about 2 minutes. Add the reserved liquid from the chiles, 1 cup water, the vinegar and salt and stir until the liquid is smooth and all the flour is dissolved.
  • Add the chiles and pepper and simmer for 5 to 6 minutes. Puree in a blender, or with a stick blender, and add the lime juice. Adjust to taste for salt and pepper. Refrigerate for up to 1 week.

10 tomatillos, husked and rinsed
8 serrano chile peppers, sliced
1 onion, sliced
1 tablespoon chopped garlic
2 tablespoons salt, or to taste

Steps:

  • Place the tomatillos, serrano peppers, onion, and garlic in a saucepan, and add water to just cover. Sprinkle the salt over the top, bring to a boil, reduce the heat to medium-low, and cook until the tomatillos are soft and have turned slightly brownish in color, 20 to 30 minutes. This is a recipe I modified from a Ball Blue Book recipe. It's a great way to use up your green tomatoes! Adjust the number of peppers to your taste. Ten will give you medium heat.

7 c chopped green tomatoes
10 jalepeno peppers, chopped & seede
2 c chopped red onions, about two large
4 clove garlic, finely minced
1/2 c lime juice
1/2 c sugar
1/2 c minced fresh cilantro
1/4 c minced fresh thyme
1/8 c minced fresh oregano
1 Tbsp ground cumin
2 tsp gourmet salt blends roasted garlic shallot & pepper salt

Steps:

  • 1. Boil water in canner. Keepjars and lids in simmering water until ready for use but do not boil.
  • 2. Combine tomatoes, peppers, onion, garlic and lime juice in a large saucepan. Bring to a boil. Stir in sugar, cilantro, cumin, oregano, thyme and Gourmet Salt Blends salt. Reduce heat and simmer 5 minutes.
  • 3. Ladle hot salsa into hot jars leaving 1/2 inch headspace. Remove air bubbles by running a spatula around the inside of the jar. Wipe rim with a damp paper towel. Place lids and bands and adjust until fit is fingertip tight.
  • 4. Process for 20 minutes, adjusting for altitude. Remove jars and set on a clean dish towel cool. Check lids for seal after 24 hours.

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
  • Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
  • Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.

12 tomatillos, cleaned and halved
3 large onions, cubed in large chunks
12 garlic cloves
4 large jalapenos, stems removed and halved (kept the seeds for heat)
3 cups chicken stock
3 tablespoons olive oil
1 cup cilantro (stems and leaves)
salt and pepper

Steps:

  • Place tomatillos, onions, garlic and jalapenos on a baking sheet or pan that has sides.
  • Sprinkle with olive oil, salt and pepper.
  • Roast for 1 1/2 hours at 400 degrees.
  • Remove from oven and cool for 15 minutes.
  • Place veggies (and juice that accumulated on baking sheet) in a food processor. Pulse several times.
  • Add cilantro and a little stock at a time (approx 1/2 cup at a time) until desired consistency.

1.5 lbs mild New Mexico green chiles, roasted, peeled, seeded deveined and chopped to measure 2 cups
3/4 lb fresh hot green NM chiles roasted, peeled seeded, deveined and chopped to measure 1 cup
IF NM CHILES ARE NOT AVAILABLE: Substitute fresh Poblano chiles for fresh NM.
4 c water
1/2 white onion, cut into med dice
2 t dried Mexican oregano
6 cloves garlic, finely mincerd
1.5 t fosher salt
2 T vegetable oil
3 T all purpose flour

Steps:

  • Place all ingredients except the vegetable oil and flour, in a large saucepan over medium heat. Simmer uncovered, until juice has thickened and is opaque, 20-30 min. Stir occasionally, taking care that the chiles do not burn or stick to the bottom of the pan. In a small bowl, whisk together the oil and flour until smooth and well blended, to form the base for a roux. Place in a saucepan over medium-high heat until hot and bubbling. Reducer the heat to low and whisk constantly until roux is slightly brown and has a nutty flavor. Remove from heat. Add 1/2 c of the green chile mixture to the roux and whisk thoroughly until smooth. Add the roux to the remaining chile mixture and cook over low heat untl the sauce thickens and the flour taste disappears (about 15 min) Add salt to taste. Cool , coer and store in non reactive container in refry until needed up to 4 days. Check that it does not sour. Can be frozen up to 2 mo. To serve, reheat over low heat. VARIATION : CHILE VERDE Prepare sauce as directed. Cut 1 lb pork shoulder in half and trim off fat. Place pork in a saucepan with 2 white onions, quartered, 1.5 t. salt, 2 t cumin seeds, 2 t dried Mexican oregano, 12 whole black peppercorns, and water to cover about 8 cups. Cover and simmer over low heat uti meat is tender, about 1 hr. Drain,and with two opposing forks , shred the meat into long strings, Chop the shredded meat with a cleaver into 1/2 inch lengths and stir into prepared green chile sauce.
