2 tablespoons milk
1 tablespoon all-purpose flour
2 cups shredded Cheddar cheese
2 (4 ounce) cans chopped green chilies

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9 inch pie plate.

4 poblano chiles or 1 small can diced green chiles
1 pound ground bison
1/2 cup finely chopped cilantro
1/4 cup finely chopped onion
1 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon salt (optional)
4 fried eggs
Optional garnishes: avocado and lettuce

Steps:

  • If using poblano chiles, cut the chiles in half lengthwise and discard seeds. Place halves, skin sides up, on a foil-lined baking sheet and broil until blackened, 5-10 minutes, Place in a plastic bag; seal. Let stand 15 minutes. This will loosen the skin so it is easier to peel off. After peeling, discard skins and roughly chop the chiles. In a bowl mix diced chiles with meat, cilantro, onion, spices and salt.
