1 cup thinly sliced scallions
1 cup seasoned rice vinegar
¼ cup granulated sugar
¼ teaspoon kosher salt (such as Diamond Crystal)
2 garlic cloves, grated
¼ cup apple cider vinegar
½ teaspoon celery seed
¼ teaspoon kosher salt (such as Diamond Crystal)
¼ cup extra-virgin olive oil
½ teaspoon hot sauce (optional)

Steps:
