Time 20m

Yield Serves 4 to 6

Number Of Ingredients 5

1 pound green beans, trimmed
2 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced (2 tablespoons)
Coarse salt and freshly ground pepper
1 small lemon, very thinly sliced (about 1/3 cup)

Steps:

  • Blanch green beans in a large pot of salted water until tender, 5 minutes. Drain and transfer to a large plate or rimmed baking sheet to cool.
  • Heat oil in a large skillet over medium-high. Add garlic and cook until softened and just beginning to color, 1 to 2 minutes. Add green beans and season generously with salt and pepper. When green beans are hot, toss in lemon slices and cook 1 minute over high. Check seasoning -- beans should be well-seasoned and bright but not too sour. Serve hot, or preferably at room temperature.

Tips:

  • When choosing green beans, look for ones that are bright green and snap easily. Avoid beans that are limp or have brown spots.
  • To trim the green beans, simply snap off the ends. You can also use a knife to cut off the ends if you prefer.
  • If you are using fresh lemon juice, be sure to strain it before adding it to the recipe. This will help to remove any seeds or pulp.
  • Garlic is a key ingredient in this recipe. Be sure to use fresh garlic for the best flavor.
  • If you don't have white wine vinegar, you can substitute apple cider vinegar or rice vinegar.
  • This recipe is easily adaptable. You can add other vegetables, such as broccoli or carrots, if you like.
  • Green beans with lemon and garlic can be served as a side dish or a main course. They are also a great addition to salads or pasta dishes.

Conclusion:

Green beans with lemon and garlic is a simple but flavorful dish that is perfect for any occasion. It is a healthy and delicious way to enjoy this versatile vegetable. So next time you are looking for a quick and easy side dish, give this recipe a try. You won't be disappointed!
