GREEN BEANS WITH BLUE CHEESE AND TOASTED ALMONDS

Green Beans With Blue Cheese and Toasted Almonds image

This is a wonderful veggie side dish to serve to guests, it is more like a bean salad, as it is not meant to be served hot, but at room temperature. The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

12 oz fresh green beans, trimmed
1/2 cup pecan halves
2 tablespoons butter (do not use margarine)
3 oz blue cheese, crumbled (3/4 cup)

Steps:

  • In 2-quart saucepan, place beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 8 to 10 minutes or until beans are crisp-tender; drain. Place in serving bowl; cover to keep warm.
  • Meanwhile, in 1-quart saucepan, cook pecans over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are golden brown and toasted. Place in small bowl; reserve.
  • In same 1-quart saucepan, melt butter over low heat. Heat, stirring constantly about 6 minutes or until butter is golden brown. (Once the butter begins to brown, it browns very quickly and can bum, so use low heat and watch carefully.) Immediately remove from heat. Pour over beans; toss to coat. Sprinkle with cheese and reserved pecans.

Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the green beans. Remove the ends of the beans where the stem was attached. You can also trim the beans into smaller pieces, if desired.
  • Blanch the green beans. Blanching is a quick process of boiling the beans in water and then immediately transferring them to ice water. This helps to preserve their color and nutrients.
  • Cook the green beans. You can cook the green beans in a variety of ways, such as boiling, steaming, or sautéing. Be careful not to overcook them, as they should still be slightly crunchy.
  • Add the blue cheese dressing. Once the green beans are cooked, toss them with the blue cheese dressing. You can make your own dressing or use a store-bought variety.
  • Serve the green beans. Green beans with blue cheese dressing can be served as a side dish or as a main course. They are also a great addition to salads or sandwiches.

Conclusion:

Green beans with blue cheese dressing is a delicious and easy-to-make dish that is perfect for any occasion. The combination of the fresh, tender green beans and the creamy, tangy blue cheese dressing is simply irresistible. So next time you're looking for a new side dish or main course, give this recipe a try. You won't be disappointed!
