1/4 cup minced onion
1/2 teaspoon salt
1 teaspoon red wine vinegar
1 dash pepper
4 cups fresh cooked beans or 4 cups canned green beans (hot)

  • Saute bacon in skillet until brown.
  • Remove and set aside.
  • To skillet add onion and saute until tender.
  • Return bacon, add seasonings and beans.
  • Heat through.

1/2 head of garlic
1/2 cup extra-virgin olive oil
1 Tbsp. harissa paste
3/4 tsp. cumin seeds
3/4 tsp. kosher salt
1 Tbsp. sherry vinegar

Steps:

  • Place a rack in middle of oven and preheat to 350°F. Toss green beans, garlic, oil, harissa, cumin seeds, and salt in a shallow 2-qt. baking dish to combine.
  • Turn garlic cut side down, then roast vegetables, tossing 2 or 3 times, until golden brown and very tender, 60-70 minutes. Let cool slightly, then add vinegar and toss to coat.

2 cups tomatoes, canned
1/2 cup celery, chopped
1/4 cup green bell pepper, chopped
1/2 teaspoon onion powder

Steps:

  • Cook green beans until tender, about 8-10 minutes; drain.
  • In a skillet, combine green beans, tomatoes, celery, bell pepper and onion powder.
  • Cook over medium heat 15 minutes, or until thoroughly heated.
