SLOW COOKER GREEN BEANS, HAM AND POTATOES

Slow Cooker Green Beans, Ham and Potatoes image

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

GREEN BEANS AND HAM HOCKS

Green Beans and Ham Hocks image

It has been cold and snowing here. Just the right weather for soups and comfort food. These green beans and ham hocks are so good. They do not need any added spices or seasoning but you can add them if you desire. There is no need to add salt to these since the ham hocks/shanks are already salty. I am sensitive to pepper so I did not add any to these but you can if you want to. I just don't know how much to add. They can be served as a meal with cornbread or as a side dish with meat This can easily be turned into soup by adding other vegetables. Cook time varies according to your crockpot. When I lower my 3.5 quart crockpot to low, it does not boil or even simmer so I cook these on high the whole time. Stovetop method time is approximate. These smell so good while they cook.

HAM HOCKS AND BEANS

Ham Hocks and Beans image

Comfort food at its best. Many people will tell you to soak your beans first (however, I have been told that you should soak dry beans when using a pressure cooker. Please follow manufactorers instructions in this case). I never do. I just wash them and cook them as below. For a really hearty winter meal, serve these with a loaf of hot fresh bread or a pan of corn bread and a pan of old fashioned crisp fried potatoes. These may also be made in the pressure cooker and crockpot.

1 large bay leaf

1 teaspoon pepper
salt

Steps:

  • Wash beans and remove all gravel and such.
  • Place beans, ham hocks, onions and garlic in a large dutch oven filled with water.
  • Add spices.
  • Bring to boil.
  • Simmer on med-low heat for 4 to 5 hours, adding more water as needed.

CROCK POT GREEN BEANS & HAM

Crock Pot Green Beans & Ham image

I came up with this recipe when I had an abundance of fresh green beans. After canning 30 quarts, I knew I needed to find something else to do with all those beans! It's easy to prepare and one of my family's "comfort food" favorites. NOTE: not every crockpot cooks the same. My Rival crock pot is 20 years old and on the "high" setting food actually comes to a low boil. If your crock pot does not get that hot, then you will need to adjust for a longer cooking time.

Provided by LainieBug

Time 4h20m

Yield 4 serving(s)

Number Of Ingredients 7

2 lbs fresh green beans
1 smoked ham hock, cut up
2 garlic cloves, minced
1 medium onion, chopped
2 cups Swanson chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper

  • Place cut up ham hock in crock pot.
  • Rinse beans and snap into halves or thirds.
  • Place beans over ham.
  • Place chopped onion and minced garlic over bean/ham mixture.
  • Sprinkle with salt and pepper.
  • Pour chicken broth over all.
  • Cover and cook on high 4 hours.

Tips:

  • Choose the right ham hocks: Look for ham hocks that are meaty and have a good amount of fat. Avoid hocks that are too lean or dry.
  • Soak the ham hocks: Soaking the ham hocks in water for several hours or overnight will help to remove some of the salt and make them more tender.
  • Simmer the ham hocks: Simmer the ham hocks in a large pot of water for at least 2 hours, or until the meat is fall-off-the-bone tender.
  • Add vegetables: Add your favorite vegetables to the pot with the ham hocks during the last 30 minutes of cooking. Some good choices include green beans, potatoes, carrots, and onions.
  • Season to taste: Season the ham hocks and vegetables with salt, pepper, and other spices to taste.

Conclusion:

Green beans and ham hocks is a classic Southern dish that is easy to make and always a crowd-pleaser. It is a hearty and flavorful dish that is perfect for a weeknight meal or a special occasion. With a few simple tips, you can make the best green beans and ham hocks that your family and friends will love.
