GREEK-STYLE SALAD WITH SPAGHETTI SQUASH image

Categories     Vegetable     Side

Yield 8 cups (Servings)

Number Of Ingredients 14

3 TBS red wine vinegar
2 tsp. EVOO
1 tsp. dried organo
1/4 tsp salt
1/4 tsp black pepper
2 garlic cloves
3 cups cooked spaghetti squash
2 cups chopped tomato
1 cup diced cucumber
1/2 cup (2 oz) crumbled feta cheese
1/4 cup diced green pepper
1/4 cup diced red onion
2 TBS chopped, pitted Kalamata olives
1 (15.5 oz) can chickpeas, drained and rinsed

Steps:

  • Combine first 6 ingredients in a bowl. Stir well w/ a whisk. Combine squash and remaining ingredients in a large bowl. Add vinegar mixture; toss well. Cover & chill.

Tips:

  • Use a variety of squash. The recipe calls for zucchini, yellow squash, and pattypan squash, but you can use any type of squash you like. Just make sure they are all about the same size so they cook evenly.
  • Don't overcrowd the pan. When you are frying the squash, make sure to give them enough space in the pan so they can cook evenly. If you overcrowd the pan, the squash will steam instead of fry and they will be soggy.
  • Cook the squash until it is golden brown. This will ensure that the squash is cooked through and has a nice caramelized flavor.
  • Season the squash to taste. You can use any seasonings you like, but salt, pepper, garlic powder, and oregano are a good place to start.
  • Serve the squash hot. Greek-style squash is best served hot, right out of the pan. You can serve it as a side dish or main course.

Conclusion:

Greek-style squash is a delicious and easy-to-make dish that is perfect for a summer meal. The squash is fried until golden brown and then seasoned with salt, pepper, garlic powder, and oregano. It is a flavorful and versatile dish that can be served as a side dish or main course.
