1 (16 ounce) package spaghetti
2 pounds ground beef
¼ cup chopped onion
2 (26.5 ounce) cans meatless spaghetti sauce
1 (16 ounce) container fat-free sour cream
2 cups shredded mozzarella cheese, divided
½ cup Parmesan cheese
salt and black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a deep 9x13 inch baking dish.
  • Bring a large pot of salted water to a boil over high heat. Stir in the spaghetti. Boil the pasta until cooked through but still firm to the bite, 8 to 10 minutes. Drain well.
  • Brown ground beef and onion in a large skillet over high heat; drain fat. Stir in the spaghetti sauce, sour cream, and 1 cup of the mozzarella. Mix in the cooked pasta. 1/2 pound ground beef
1/2 pound ground lamb
1 large onion, chopped
4 garlic cloves, minced
3 teaspoons dried oregano
1 teaspoon dried basil

1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 tablespoon lemon juice
1 teaspoon sugar
1/4 teaspoon ground cinnamon
2 cups uncooked rigatoni or large tube pasta
4 ounces feta cheese, crumbled

Steps:

  • In a large skillet, cook beef and lamb over medium heat until no longer pink; drain. Stir in the onion, garlic, oregano, basil, salt, pepper and thyme. 1 lb elbow macaroni, cooked al dente
1 lb browned ground beef
15 ounces ricotta cheese
4 ounces crumbled feta cheese
1 cup shredded mozzarella cheese
1 egg
1 teaspoon garlic powder
1 tablespoon dried oregano
1 tablespoon dried onion flakes
2 (8 ounce) cans diced tomatoes, drained
2 cups marinara sauce
12 chopped kalamata olives

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix ricotta, egg, garlic powder, oregano, onion flakes, 4oz feta and mozzarella in a large bowl.
  • In a separate bowl, mix beef, tomatoes, olives, 1.5 cups marinara sauce and pasta.
  • Grease the largest casserole dish you've got. . LOL. . .you can do a 9x13 and a pie plate or two 8x8s, whatever you choose. In each casserole dish, layer pasta mixture, then top with some of the cheese mixture, then more pasta mixture and more cheese mixture.

1/4 cup butter
1 large onion, chopped
1 large bell pepper, chopped
32 ounces whole tomatoes
8 ounces mixed mushrooms, drained and chopped
4 ounces chopped black olives
8 ounces shredded cheddar cheese
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup skim milk

Steps:

  • Preheat the oven to 325. Prepare the spaghetti noodles as directed on the package and drain.
  • Meanwhile, melt the butter in a skillet and sweat the onion and bell pepper until they are soft. Chop the tomatoes and add them and the liquid from the can to the sauce. Add the mushrooms and black olives and bring to a simmer for five minutes.
  • Whisk together the cream of mushroom soup and the milk.
  • Grease a 9"x13" pan. Add half of the spaghetti noodles, half of the sauce, half of the cheese, and half of the mushroom soup. Repeat for a second layer.
  • Bake 40 minutes at 325.

2 tablespoons extra-virgin olive oil
1 large onion, chopped

2 tablespoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground cinnamon

One 26-ounce jar tomato-basil sauce (3 1/4 cups)
1 1/2 packed cups fresh mint leaves, chopped
1 cup milk, at room temperature
1/2 cup heavy cream, at room temperature
3 cups grated Parmesan (about 6 ounces)
1 cup plain Greek yogurt, at room temperature
1/4 cup chopped fresh mint leaves, optional

Steps:

  • Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter a 9-by-13-inch baking dish.
  • Bring a large pot of salted water to a boil over high heat. Cook the noodles until tender but still firm to the bite, stirring occasionally, 7 to 9 minutes. Drain and transfer to a large bowl.

1/2 cup red wine
1/4 cup water

1 (14 ounce) can tomatoes (undrained)
1/4 cup flour
2 cups half-and-half cream

  • In a small bowl, combine the 1/2 cup bread crumbs with 2 Tbsp Parmesan cheese; sprinkle over the top of the casserole.
  • Bake for 25-30 minutes, or until hot and bubbly.
