LAMB BAKED IN YOGURT

Lamb Baked in Yogurt image

In the northern parts of Greece, all sorts of meats, from chicken to savory meatballs to lamb and goat, are cooked in sauces based on the local, delicious, thick, strained sheep's milk yogurt. This dish comes from the traditional cooking of the Vlachs, a once itinerant shepherd tribe, and is sometimes called vlachiko. I have modified this recipe by using boneless lamb instead of leg of lamb and replacing some of the butter with olive oil when browning the meat and vegetables.

Provided by Diane Kochilas

Categories     dinner     Lunch

Number Of Ingredients 14

2 tablespoons extra-virgin Greek olive oil
1 tablespoon butter
1 1/2 pounds/750 g boneless lamb (or goat, cut into serving sizes)
4 scallions (trimmed and finely chopped)
2 garlic cloves (finely chopped)
1/2 cup parboiled rice
1/2 cup white wine
1 cup water
Salt and pepper
2 large eggs
2 cups Greek yogurt
2 tablespoons all-purpose flour
2 tablespoons finely chopped fresh mint
3 tablespoons grated kefalotyri cheese (optional)

Steps:

  • Preheat the oven to 350°F/180°C.
  • Heat the olive oil and butter in a large, wide pan over medium-high heat and brown the lamb pieces, turning to color evenly. Add the scallions and stir until soft. Stir in the garlic and cook for a few minutes to soften. Add the rice and pour in the wine and water. As soon as the rice has absorbed most of the liquid, season the contents of the pot with salt and pepper and remove from heat.
  • Whisk the eggs until creamy. In a separate bowl, whisk together the yogurt and flour. Whisk the yogurt mixture into the eggs and stir in the chopped mint. Season lightly with a little salt.
  • Place the lamb mixture in a clay or ovenproof glass or ceramic baking dish about 3 inches/7.5 cm deep. Spread the yogurt mixture evenly over the meat. Bake uncovered for 45 minutes until the yogurt is set and lightly browned on top and then cover and cook for another 45 minutes until the lamb tender. Ten minutes before removing from oven, sprinkle, if desired, with grated kefalotyri cheese.

Time 2h30m

Number Of Ingredients 25

2.4 pounds (1100 grams) minced beef
3 tablespoons olive oil (or vegetable oil)
1 large onion, grated or finely chopped
1 carrot, grated
2 bay leaves
1 cinnamon stick
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup dry wine (red or rose)
1/4 cup thick tomato paste
2 cups pureed tomatoes (canned or fresh)
1 teaspoon sugar
Salt and pepper to taste
1 package 1 pound/450 grams pastitsio pasta No2, bucatini pasta, or penne
1 1/2 cups (120 grams) grated cheese (cheddar, Parmigiano Reggiano, Greek Kefalotiri)
2 teaspoons fine salt (for the water for the pasta)
1 cup plus 2 tablespoons (150 grams) all-purpose flour
1/2 cup (100 grams) olive oil (or butter)
Freshly ground nutmeg (about 1/3 of a nutmeg seed)
1/2 teaspoon ground cinnamon
1 1/2 teaspoons fine salt
6 cups (1500 grams) milk, warm
2 eggs
1 1/2 cups (120 grams) grated cheese (cheddar, Parmigiano Reggiano, Greek Kefalotiri)
One deep casserole dish about 14 x 10 inches (36 x 25 cm) and 2.5 inches (6.5 cm) deep or one round pan 14 inches (35cm) in diameter and 2.5 inches (6.5 cm) deep

Steps:

  • Make the meat sauce: Heat a deep pan over high heat and add the oil and the minced beef. Let it brown, without stirring, and when the meat is no longer red, stir with a wooden spatula and break any meat lumps. Cook until all the juices have evaporated, reduce heat to medium/high and add the onion the carrot, the bay leaves, the cinnamon stick, the allspice and the cloves. Stir for 5 minutes and add the wine. Wait for 1 minute for the alcohol to evaporate and add the tomato paste, the pureed tomatoes, the sugar, the salt and the pepper. When it starts to boil again, reduce heat to low and simmer until almost all of the liquids have evaporated (about 30 minutes). Remove and discard the bay leaves and the cinnamon stick.
  • In the meantime, make the pasta: Cook the pasta in a pot with salted water, until al dente, according to the packaging directions.
  • Drain the pasta well, mix in the grated cheese and transfer about two-thirds of the pasta to the casserole dish. Level with a spoon and cover with the meat sauce. Level the meat sauce with the back of a spoon and spread the rest of the pasta uniformly over the meat.
  • Preheat your oven to 374°F (190°C)
  • Make the béchamel sauce: Cook the flour with the oil in a large pot stirring continuously with a whisk until it starts to smell nutty. Remove from the heat and add the cinnamon, the nutmeg, and the salt. Whisk to combine and add the warm milk gradually, whisking constantly to prevent it from forming any lumps. At first it will thicken, but as you continue to add the milk it will loosen up. When all the milk is added, return to the stove and cook over medium heat, whisking constantly, until it thickens. When it starts to bubble, remove from the heat and let it sit on your counter for 5 minutes to cool a little. Add 1 cup of the grated cheese and the eggs and whisk quickly to combine.
  • Pour the béchamel sauce over the pasta, level with a spatula and sprinkle the surface with the remaining grated cheese.
  • Bake for 50-60 minutes or until the top is golden brown with dark spots all over the surface. Let it rest for 20-30 minutes before slicing for easier serving. Eat!

SPICED LAMB MEATBALLS WITH YOGURT AND HERBS

Spiced Lamb Meatballs With Yogurt and Herbs image

These spice-loaded meatballs have a Turkish inflection. The warm yogurt sauce adds tang and richness, along with a sprinkling of tart sumac powder and chopped mint. American "Greek-style" yogurt is not always tart enough, but it can be thinned with a bit of buttermilk or even lemon juice. Whisking it with cornstarch and egg produces a silky sauce. Though the ingredient list looks long, this is a simple and impressive dish to make.

Categories     dinner, easy, meatballs, main course

Time 1h

Yield 5 to 6 servings

Number Of Ingredients 21

1 1/2 pounds ground lamb, not too lean (from a cut like shoulder or breast, not leg)
1/2 cup breadcrumbs
2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 cup finely diced red onion
1 teaspoon toasted ground cumin
1 teaspoon toasted ground coriander
1/4 teaspoon cinnamon
Pinch of cayenne
3 eggs
Extra-virgin olive oil
1 cup chicken broth
1 cup plain, very tart yogurt (if using Greek-style yogurt, thin it with milk and lemon juice)
1 tablespoon cornstarch, dissolved in 2 tablespoons water
2 ounces crumbled feta cheese
1/2 teaspoon sumac
Crushed red-pepper flakes, to taste
Turmeric, for garnish (optional)
3 tablespoons chopped mint
2 tablespoons chopped dill
Cilantro sprigs

Steps:

  • In a large bowl, use your hands to combine lamb, breadcrumbs, salt, pepper, onion, cumin, coriander, cinnamon and cayenne. Beat 2 of the eggs and add to meat, mixing until incorporated. Cover and refrigerate for 30 minutes to 24 hours to allow the seasonings to permeate the meat.
  • Using wet hands, break off walnut-sized pieces of lamb mixture, roll into spheres and set aside on a baking sheet. You should have about 30 1-ounce meatballs.
  • Heat oven to 225 degrees. In a large skillet, heat 2 tablespoons oil over medium-high heat. When shimmering, add meatballs in one layer and brown for 2 to 3 minutes. Turn and cook for 4 to 5 minutes more. (Work in batches, if necessary, to avoid crowding the pan.) Transfer to a paper towel-lined baking sheet to blot any extra oil, then pile meatballs on a heatproof serving platter and keep warm in the oven.
  • Pour off any excess oil from skillet and turn heat to high. Add broth and bring to a simmer. In a bowl, whisk together yogurt; 1/2 teaspoon salt; remaining egg, beaten; and cornstarch. Pour yogurt mixture in a thin stream into the hot broth, whisking constantly. Turn heat down slightly and continue whisking until yogurt is heated through and slightly thickened, about 1 minute. Do not let mixture boil.
  • Pour hot yogurt sauce over meatballs. Sprinkle crumbled feta, sumac and crushed red pepper on top. Finish with pinches of turmeric, if using, and sprinkle with mint, dill and cilantro. Serve immediately with rice, orzo, pita bread or potatoes.

YOGURT-MARINATED ROAST LEG OF LAMB

Yogurt-Marinated Roast Leg of Lamb image

A tangy yogurt-herb marinade tenderizes this leg of lamb, then browns in the oven to add flavor to the drippings. Top with chunky Almond Relish for a dramatic dish worthy of a holiday feast or special occasion. (Plan ahead: Chef Berglund recommends two days of marination.)

Provided by Paul Berglund

Categories     main-dish

Time P2DT4h

Yield 8 servings

Number Of Ingredients 12

1 4-inch piece ginger, about ¼ cup chopped
4 cloves garlic
1 yellow onion
1 bunch parsley, divided
1 bunch cilantro, divided
1 quart whole-milk yogurt
2 tablespoons kosher salt
1 bone-in leg of lamb, 5?7 pounds
1 cup whole almonds, toasted, oven-toasted at 350 degrees F for 8?10 minutes
1/2 cup extra-virgin olive oil
Juice of 2 lemons
Kosher salt

Steps:

  • Marinade: Use a spoon to peel the ginger. Peel garlic and onion. Roughly chop onion and ginger, followed by half of the parsley and cilantro, including stems. In a blender, add the ginger, onion, garlic, herbs, ⅓ of the yogurt, and salt. Purée until smooth. Add the remaining yogurt and purée again to combine. Set aside.
  • Lamb: Place lamb on a flat surface. Use a sharp knife to poke holes in the lamb at 1½-inch intervals; this will help the lamb absorb the marinade. Flip over and repeat on the other side. Fit a brining bag into a large container (or the roasting pan you'll be using, if it fits in the refrigerator). Then place the lamb into the bag and pour in the marinade. Massage the marinade into the lamb so all of the meat is covered, then seal the bag. Refrigerate for 1-2 days (longer marination will yield more tenderized lamb).
  • Preheat the oven to 350 degrees F. Transfer the lamb and all of the marinade into a roasting pan. Lay parchment paper over the lamb to cover, then cover the roasting pan tightly with aluminum foil. Roast for 1 hour. (Total roasting time will be 3 hours.)
  • After 1 hour, remove lamb from oven. Gently remove foil and parchment. (The yogurt will have separated into curds and whey, which is normal.) Use tongs to flip the lamb over, then cover with parchment and foil again. Place back into the oven for 1 hour. After the second hour of roasting, flip the lamb again and place back into the oven, uncovered, for 1 final hour.
  • After a total of 3 hours of roasting, remove lamb. Pierce the lamb with a sharp knife to check for doneness. If there isn't a lot of resistance, it's done. Flip lamb over, spoon yogurt solids on top, and let rest, 30 minutes.
  • Almond Relish: Roughly chop the almonds, place in a medium bowl, and set aside. Pick the leaves off the remaining cilantro and parsley, bunch together, and finely chop. Add herbs to the almonds. Add enough olive oil to cover, about ½ cup, and mix. Juice 3 of the 4 lemon halves into the relish, mix, and add salt to taste. Use the juice of the remaining lemon half to taste.
  • Assembly: Use tongs and a meat fork to transfer lamb to a serving platter. Spoon relish over the lamb, and serve.

GREEK LAMB & YOGHURT PASTA BAKE

Greek Lamb & Yoghurt Pasta Bake image

Adapted from a recipe I found in a recent issue of the Australian magazine 'New Idea'. This recipe is strong on lemon flavouring so if strong citrus flavourings are not your scene, you may like to add ½ teaspoon nutmeg to the yoghurt topping instead of the lemon zest. I haven't yet had the chance to make this recipe, but I didn't want to risk misplacing it (little chance of that: I've adapted it to my liking already!), so I'm posting it here for safe-keeping. I'm absolutely intrigued - and excited - by the idea of a yoghurt topping: a healthier creamy topping! WOW! I'm always keen to double quantities of recipes like this one so as to freeze some dinners both for those inevitably busier evenings and for great take-to-work lunches. Freezing details have been included here. The canned tomatoes I use (Italian) have very little juice. If your canned tomatoes have a lot of juice, you may like to drain them. You can always add a bit of what's been drained off, though I'm always keen to make some space for a bit of wine!

Time 1h10m

Yield 1 10-cup Dish, 4-6 serving(s)

Number Of Ingredients 17

250 g penne or 250 g ziti pasta
1 tablespoon olive oil
1 red onion, finely chopped
2 -3 garlic cloves, crushed
500 g ground lamb, minced lamb (for Australians)
1 tablespoon herbs (oregano, sage, thyme, basil, mint, according to taste preferences)
1/2 cup kalamata olive, pitted
1 zucchini, chopped
2 (410 g) cans tomatoes, chopped
1/2 cup red wine, such as merlot (optional)
salt, to taste
fresh ground black pepper, to taste
1/4 cup parmesan cheese, finely grated
rocket or baby spinach leaves, to garnish
500 g Greek yogurt
1 egg, lightly beaten
1 tablespoon finely grated lemon zest, see alternative in the notes (above)

Steps:

  • Cook pasta in boiling salted water until just tender, and drain.
  • Heat oil in pan, sauté onion and garlic, stirring occasionally, until they have softened; remove from the onion and garlic mixture from the pan.
  • Add the lamb to the same pan in batches until the lamb is browned; depending on the size of the pan, you may need to brown one batch of lamb at a time.
  • Add herbs, olives, zucchini and tomatoes and bring to the boil; if adding wine, allow the liquid to reduce before adding the wine.
  • Add the pasta to the pan and mix well.
  • Add salt and freshly ground black pepper, to taste.
  • Spoon pasta mixture into a large ovenproof, freezer-proof (if you are planning to freeze this dish) 10 cup capacity dish, or into several smaller dishes.
  • Pour the topping over the mixture and sprinkle with parmesan.
  • Cook in a moderate oven (180°C) for about 45 minutes or for a shorter time if you have used several smaller dishes.
  • Serve with rocket or baby spinach leaves.
  • To Freeze: make the recipe to the end of step 8. Cool for 15 minutes, cover with plastic wrap, label and freeze for up to 2 months.
  • To Serve: Thaw the pasta in its dish in the refrigerator, remove the plastic wrap, place the dish on an oven tray, cover it tightly with foil and bake in a moderate oven ((180°C) for about 30 minutes. Remember, if you have used a smaller dish for a smaller quantity, it will not require as long for reheating. Serve with rocket or baby spinach leaves.

Tips:

  • For the best flavor, use high-quality lamb mince. Look for lamb that is fresh and has a good amount of fat marbling.
  • Don't overcook the lamb. It should be cooked through, but still slightly pink in the center.
  • Use a good quality Greek yogurt. It should be thick and creamy, and have a slightly tangy flavor.
  • Don't be afraid to experiment with different types of pasta. Any short pasta, such as penne, fusilli, or rotini, will work well in this dish.
  • Serve the pasta bake with a fresh salad and a glass of red wine for a complete meal.

Conclusion:

This Greek lamb yoghurt pasta bake is a delicious and easy-to-make dish that is perfect for a weeknight dinner. It is also a great way to use up leftover lamb. The combination of lamb, yogurt, and pasta is simply irresistible, and the herbs and spices add a delicious flavor.
