2 medium cucumbers, peeled, seeded
1 pint cherry tomatoes
1/2 teaspoon salt
1/4 chopped green onion (or red onion)
1 cup feta cheese, crumbled
2 tablespoons lemon juice
1 tablespoon olive oil
1/8 teaspoon fresh ground black pepper

Steps:

  • Chop the cucumbers into 1 inch cubes. Place in a medium size bowl and sprinkle with salt. Let sit 15 minutes to release water.
  • Drain excess water and stir in cherry tomatoes, onions and cheese.

1/4 cup chopped green onion
1 teaspoon minced fresh dill
1 small garlic clove, minced
1 cup sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper

lemon juice (optional)

Steps:

  • In a small bowl, combine sour cream, salt, pepper and cumin, whisk until blended.

5 cups english cucumbers, in a large dice (approximately 3 english cucumbers)
1 cup red onion, diced small
3/4 cup red bell pepper, diced small
1/2 cup scallions, sliced thinly (green and white parts)
1 red chili seeded and minced
3 tablespoons chopped cilantro
2 lemons (zest of one lemon and juice of both)
1 tablespoon rice wine vinegar
1/2 tsp kosher salt
1 1/2 cup feta cheese, crumbled in to medium size chunks

Steps:

  • Peel the cucumbers, slice in half the long way and remove the seeds. Tip: use a grapefruit spoon to help with seeding the cucumbers. Slice the cucumber the long way again and slice into uniform pieces. If you want to make it into a salsa dice the cucumber smaller Dice the red onion and red bell pepper. If want more color you can use a 1/4 cup each of red, yellow and orange bell pepper. Tip: if you do not like a strong onion flavor place the onions in cold water till you are ready to use them. Slice the scallions into thin rounds Mince the cilantro and red chili. Note: If you are not a fan of cilantro you can use parsley instead. Zest the lemon and then roll the lemons on the counter and juice them. Mix in a large non reative bowl all the ingreidents except for the feta cheese. Let sit for at least an hour for the falvors to meld together. Right before serving crumble the feta into chucks and toss in to the salad.

1 cup Feta cheese, crumbled
2 tablespoon Fresh oregano leaves, chopped
1 clove Garlic, minced
1 Shallot, minced
2 Lemons, juice and zest
1/4 cup Olive oil

  • Slice cucumbers as thinly as you can. A mandoline or vegetable slicer will make quick work of it. Toss together the cucumbers and a large pinch of salt in a mesh strainer set over a bowl.
  • Combine the feta, oregano, garlic and shallots in a separate bowl. Add the lemon juice and zest and whisk in the olive oil.
  • Drain off and discard any water that has released from the cucumbers.
  • Toss together the cucumbers and the dressing.
