Steps:
- Slice cucumbers as thinly as you can. A mandoline or vegetable slicer will make quick work of it. Toss together the cucumbers and a large pinch of salt in a mesh strainer set over a bowl.
- Combine the feta, oregano, garlic and shallots in a separate bowl. Add the lemon juice and zest and whisk in the olive oil.
- Drain off and discard any water that has released from the cucumbers.
- Toss together the cucumbers and the dressing.
Tips:
- Use fresh, crisp cucumbers: The fresher the cucumbers, the better the salad will be. Look for cucumbers that are firm and have a deep green color.
- Peel the cucumbers before slicing: Peeling the cucumbers helps to remove the waxy coating and makes them more tender.
- Use a sharp knife to slice the cucumbers: This will help to create even slices that will cook evenly.
- Use a variety of herbs and spices: This will add flavor and depth to the salad. Some good options include dill, mint, oregano, basil, garlic, and red pepper flakes.
- Don't overdress the salad: A little bit of dressing goes a long way. If you add too much, the salad will become soggy.
- Serve the salad chilled: This will help to keep it refreshing and crisp.
Conclusion:
Greek cucumber salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a light and healthy dish, give this Greek cucumber salad a try.
