Another Junior League recipe from the Edible Heirlooms cookbook. Haven't tried it yet, but it has all of my favorite ingredients in it.

2 (8 ounce) cans crescent rolls
0.5 (1 ounce) envelope dry vegetable soup mix
1/2 cup mayonnaise
1/2 cup sour cream
1 (10 ounce) package chopped spinach, thawed and squeezed dry
1 (14 ounce) can artichoke hearts, drained and chopped
1 (8 ounce) can water chestnuts, drained and chopped
1 garlic clove, pressed
4 ounces feta cheese, crumbled
1/4 ounce parmesan cheese, fresh grated

Steps:

  • Preheat oven to 375 degrees. Flatten crescent rolls onto a baking sheet and press seams together. Bake 10-12 minutes; set aside. Combine soup mix, mayonnaise, and sour cream. Add spinach, artichoke hearts, water chestnuts, garlic, and feta cheese. Spread mixture over crescent roll dough. Top with parmesan cheese. Bake 10-12 minutes. Cut into squares with a pizza cutter and serve hot.

You want an appetizer that is YUMMY..then this recipe is for you!! I wish I had a picture..maybe next time I make this I will post one. Great for the holidays and for parties of any kind.

Number Of Ingredients 10

2 pkg (8 ounce each) refrigerated crescent rolls
1/2 c mayonnaise
1/2 c sour cream
1 envelope (.9 ounce) dry vegetable soup and dip mix (lipton)
1 pkg (10 ounce) frozen chopped spinach, thawed and well drained
1 can(s) (14 ounce) artichoke hearts in water, drained and chopped
1 can(s) (8 ounce) sliced water chestnuts, drained and chopped
1 pkg (4 ounce) crumbled feta cheese
1 glove garlic (pressed)
1/4 c (1 ounce) grated parmesan cheese (i used canned parmesan romano)

Steps:

  • 1. Preheat oven to 375. Unroll both packages of crescent rolls and lay in the bottom of a 9 x 13 baking pan lining the bottom, squeeze it all in..you may have some left over. Bake 10-12 minutes...or until light golden brown; remove from oven.
  • 2. Meanwhile combine mayonnaise, sour cream and soup mix; mix well. Drain spinach in small colander, squeezing out as much moisture as possible; add to mixture. Drain artichokes and water chestnuts..chop with knife or food chopper. Add artichokes, water chestnuts, feta cheese and garlic..mix well with all the other ingredients.
  • 3. Spread spinach mixture evenly over crust. Sprinkle Parmesan cheese over entire pan. Bake 10-12 minutes or until heated through. Remove from oven; cut into squares.

Tips:

  • For a crispier crust, use cold butter and grate it into the flour mixture.
  • If you don't have a food processor, you can use a pastry blender or two forks to cut the butter into the flour mixture.
  • Be sure to chill the dough for at least 30 minutes before rolling it out. This will help prevent the dough from shrinking in the oven.
  • If the dough is too sticky to handle, add a little more flour, one tablespoon at a time, until it is smooth and easy to work with.
  • Bake the bars until they are golden brown on top and a toothpick inserted into the center comes out clean.
