1 cup water
1 cup granulated sugar
1/8 cup loosely packed fresh mint leaves (about 3 sprigs)
1/2 tablespoon fresh lime zest, from 1 medium lime
For the Granita:
4 to 5 large pink or ruby red grapefruit
1/2 cup chilled water, optional
Fresh mint sprigs, for garnish

Steps:

  • Gather the ingredients.
  • In a medium saucepan over medium heat, bring the water to a boil. Add the sugar and stir until dissolved. Reduce the heat to low, add the mint leaves and lime zest, and simmer for 5 minutes.

Add reserved vanilla bean to cream mixture; cover and chill at least 2 hours. DO AHEAD: Can be made 4 hours ahead. Keep chilled.Remove vanilla bean and rewhisk cream mixture until thick before using.
