1 cup packed brown sugar
⅓ cup vegetable shortening
⅔ cup cold water
6 cups all-purpose flour
2 teaspoons baking soda

1 teaspoon ground ginger

1 Tbsp. xanthan gum
2 tsp. salt

2 cups melted refined coconut oil or canola oil
¾ cup unsweetened applesauce
¼ cup vanilla extract
⅓ cup cold water
3 cups vegan powdered sugar
⅓ cup hot water
1 tsp. vanilla extract
