"BLUEBARB" BLUEBERRY RHUBARB CRISP

I created this dessert because I still had tons of rhubarb hanging around in my freezer and I was sick of the go-to strawberry/rhubarb combination. It turned out amazingly! The tart taste of rhubarb is, not surprisingly, complemented by blueberry. Delicious with a scoop of vanilla ice cream.

RHUBARB CRISP

Rhubarb Crisp image

I found this strawberry rhubarb crisp recipe on a box of Quaker Oats about 20 years ago. It's quick and easier to make than pie. It's versatile, too, because you can add strawberries in spring or apples in fall. I usually pop it into the oven shortly before we sit down to eat so it's still warm for dessert! -C.E. Grandma's Rhubarb Crisp image

One of many treasured recipes I found in my Grandma's recipe box. It's easy to make and tickles the taste buds.

Provided by PuglyDuckling

Categories     Dessert

Time 55m

Yield 12 serving(s)

Number Of Ingredients 8

1 cup sugar
3/4 cup flour, divided
3/4 teaspoon cinnamon
4 cups chopped rhubarb (fresh or frozen)
3/4 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup margarine, melted

Steps:

  • In bowl combine sugar, 1 T flour and cinnamon.
  • Add rhubarb; toss.
  • Place in a greased 9x13 inch baking dish.
  • In bowl combine brown sugar, baking powder, baking soda, and remaining flour; stir in butter.
  • Sprinkle over rhubarb.
  • Bake in preheated 350 degree oven for 40 minutes or until rhubarb is tender.

Tips:

  • Use fresh rhubarb: Fresh rhubarb stalks should be firm and crisp, with bright red color. Avoid stalks that are limp or have brown spots.
  • Cut rhubarb into 1-inch pieces: This will help it cook evenly in the crisp.
  • Don't overcook the rhubarb: Rhubarb should be cooked until it is tender but still holds its shape. Overcooked rhubarb will become mushy.
  • Use a variety of spices: Grandma's rhubarb crisp uses a combination of cinnamon, nutmeg, and ginger. You can also add other spices, such as cardamom or allspice, to taste.
  • Serve the crisp warm: Rhubarb crisp is best served warm, with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Grandma's rhubarb crisp is a classic dessert that is easy to make and always a crowd-pleaser. With its sweet and tangy flavor, and its crispy oat topping, this crisp is a perfect way to enjoy fresh rhubarb. Whether you are serving it for a special occasion or just as a weeknight treat, Grandma's rhubarb crisp is sure to be a hit.
