GRANDMA'S COMPLETELY DIFFERENT PECAN PIE

Grandma's Completely Different Pecan Pie image

This wonderful recipe has been passed down from my Grandma, to my Mother and now to me. This is not like your typical pecan pie, more of a softened macaroon.

Time 2h30m

Yield 1 Pie, 6-8 serving(s)

Number Of Ingredients 7

11 squares graham crackers (finely ground)
1 cup pecans (chopped fine)
3 egg whites (large)
1 cup granulated sugar
1/2 teaspoon baking powder
1 teaspoon vanilla
1/2 pint whipping cream, sweetened to taste (When making whipped cream, as you are beating the mixture, just slowly sprinkle in sugar to sweeten)

Steps:

  • Beat egg whites until very fluffy.
  • Add baking powder.
  • Very slowly add sugar while mixer beats (will become thick and heavy).
  • With rubber spatula, fold in cracker crumbs (you can roller crackers in a plastic bag to make fine crumbs).
  • Fold in nuts and vanilla.
  • Pour into greased 8" or 9" round pie pan. Bake in a preheated 350 degree oven for 30 minutes. Do not under-bake, will puff up and then settle and crack.
  • Cool, then chill in refrigerator.
  • Night before or early morning, seal to edge with whipped cream.
  • Decorate with fine graham cracker crumbs. This is even better the longer it sits with the whipped cream on it to soften it all the way through.

GRANDMA'S PECAN PIE

Grandma's Pecan Pie image

This is the recipe for the pie my grandma would always bring to special occasions, it's really easy to make and absolutely delicious! I found that the filling was too much for the pie crust, but I imagine you could fill some tarts with the excess...I haven't tried it yet though!

Tips:

  • Use fresh pecans: Fresh pecans have a sweeter, more nutty flavor than older pecans. If you can't find fresh pecans, you can substitute walnuts or almonds.
  • Toast the pecans: Toasting the pecans will enhance their flavor and make them more fragrant. You can toast the pecans in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes, or in a skillet over medium heat for 3-4 minutes.
  • Use a good quality pie crust: The crust is an important part of any pie, so it's important to use a good quality one. You can either make your own pie crust or use a store-bought one. If you're using a store-bought pie crust, be sure to pre-bake it according to the package directions.
  • Don't overmix the filling: Overmixing the filling will make it tough. Stir the filling just until the ingredients are combined.
  • Bake the pie until the filling is set: The pie is done baking when the filling is set and no longer jiggles. You can check the pie by inserting a toothpick into the center. If the toothpick comes out clean, the pie is done.

Conclusion:

Grandma's pecan pie is a classic dessert that is perfect for any occasion. With its sweet, nutty filling and flaky crust, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make dessert, give Grandma's pecan pie a try.
