1 cans campbell
1 cans cheese sauce
1 cups miracle whip
3 cups cornbread stuffing mix
3 cups cheddar cheese

Steps:

  • Defrost broccoli. Mix in large bowl cream of mushroom soup, cheese sauce, and Miracle Whip.
  • Mix broccoli, 1/2 cup stuffing mix, and shredded cheese; then mix cream mixture with broccoli mixture. Pack in large casserole dish. Top with 1/2 cup stuffing mix.

This is down home comfort food at it's finest. It was the only way my grams or mom could get me to eat my broccoli while growing up. These days I use brown rice for a lower carb, healthier version. Sometimes I also use chicken thigh instead of breast because it's so much more tender. I hope you love it was much as I do.

1 (16 ounce) package frozen broccoli
4 cups cooked rice
1 (10 3/4 ounce) can cream of mushroom soup
10 3/4 ounces milk
1 lb chicken breast
6 ounces Cheese Whiz
1/2 cup onion
1/2 cup green pepper
1/2 cup celery
2 tablespoons vegetable oil
2 ounces flour
1 dash salt

Steps:

  • Chop onions, green peppers, and celery into small pieces.
  • Fry chopped vegetables in half of the vegetable oil.
  • Cube chicken.
  • Flour and salt the chicken cubes and brown in remaining oil--add more if needed.
  • Add mushroom soup and milk and stir until mixed.
