Spaghetti is a classic Italian dish that has become popular worldwide for its simple yet delicious flavors. This article features two unique recipes for spaghetti: Grandma's Spaghetti and One-Pot Spaghetti.

Grandma's Spaghetti is a traditional Italian recipe that has been passed down through generations. It is made with a rich tomato sauce, ground beef, and plenty of Parmesan cheese. The recipe includes detailed instructions for making the sauce from scratch, using fresh tomatoes, onions, garlic, and Italian herbs. The ground beef is browned and added to the sauce, along with a touch of red wine for extra flavor. The spaghetti is cooked separately and then combined with the sauce and grated Parmesan cheese.

The One-Pot Spaghetti recipe is a modern twist on the classic dish. It is made in a single pot, making it easy to prepare and clean up. GRANDMA MAGGIO'S SPAGHETTI SAUCE

Grandma Maggio's Spaghetti Sauce image

This is one that was recited to me out of memory alone, and described as a hand of garlic, etc., though the ingredient quantities should be accurate. I encourage buying the cheapest versions of these ingredients you can find; it will feed an army for about $15 without ruining the taste. You should add more seasonings based on preference. A great vegetarian sauce, and with meatballs...it makes great meatball sandwiches.

Time 55m

Yield 10

Number Of Ingredients 13

2 tablespoons olive oil
1 onion, chopped
1 whole head garlic, peeled and chopped
2 cups sliced fresh mushrooms
½ cup chopped fresh basil leaves, or to taste
1 (28 ounce) can whole peeled tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
¾ cup Merlot wine
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons dried oregano
¼ cup white sugar

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
  • Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

GRANDMA'S OLD ITALIAN SPAGHETTI SAUCE WITH MEATBALLS

Grandma's Old Italian Spaghetti Sauce with Meatballs image

Grandma's sauce is an old recipe that she brought over from Italy. It is a long process with strange ingredients, but they all come together to make the best sauce I have ever had. The long process is worth your trouble the minute you take your first bite.

Time 8h

Yield 12

Number Of Ingredients 21

2 tablespoons olive oil
3 whole garlic cloves, peeled
2 pig's feet
1 pound pork neck bones
2 (6 ounce) cans tomato paste
1 ½ cups water
2 (28 ounce) cans tomato puree
1 tablespoon white sugar
1 teaspoon black pepper
¾ teaspoon baking soda
1 (16 ounce) loaf fresh Italian bread, torn into 2-inch pieces
1 cup water
6 eggs, beaten
1 pound ground pork
1 pound ground veal
1 pound ground beef
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons chopped fresh basil
salt and pepper to taste
6 hard-boiled eggs, peeled

Steps:

  • Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
  • Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
  • Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
  • Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

GRANDMA'S HOMEMADE SPAGHETTI SAUCE

Grandma's Homemade Spaghetti Sauce image

I got this recipe from my Grandmother. It's a basic tomato sauce that can have many things added to it to be more elaborate. Try it and let me know what you've done to make it your own!!! PS I've found that the best canned tomato products are Target's brand, I highly recommend using them!

Provided by Samantha Price

Categories     Other Sauces

Time 4h30m

Number Of Ingredients 13

1 can(s) crushed tomatos (recommend target brand)
1 can(s) tomato puree (recommend target brand)
1 can(s) water
2 can(s) small cans of tomato paste (recommend target brand)
2 Tbsp oregano, dried
1 Tbsp parsley, italian
3 Tbsp garlic powder
1 sprig(s) bay leaf
1 medium onion, whole (skin removed, top and bottom sliced flat)
1 Tbsp basil, dried
1 dash(es) ginger
3 clove garlic
1 dash(es) extra virgin olive oil

Steps:

  • 1. Pour the cans of crushed tomatoes, tomato puree and tomato paste into a large stockpot. Fill up the empty puree can with water and add to stockpot.
  • 2. Cut ends of onion & peel. Put in stockpot whole.
  • 3. Put stockpot on stove & turn on high. You will want the sauce to just begin boiling and then you can turn it down to low.
  • 4. Add rest of ingredients while sauce is heating up. Stir well once everything is added.
  • 5. Sauce will thicken as you cook it. The longer you cook it, the thicker it will get.
  • 6. I will often divide the sauce up into freezer bags or stackable tupperware and put into the freezer for easy dinners at a later date.
  • 7. I recommend adjusting the herbs to your own taste. This does not taste anything like a canned sauce! However, it is very healthy! Add meat, more garlic, veggies, cheese, cream, etc for each specific meal. Let me know what you've tried and what you think of the sauce!! Thank you!

GRANDMA'S BAKED SPAGHETTI

Grandma's Baked Spaghetti image

This is a recipe that has been in our family for almost 70 yrs, and has become synonomous with special occasions!! Was my birthday dinner for years and has become my daughter's favorite. So yummy, we presented it on fox 5's Good Day Cafe which is part of Good Day New York with Rosanna Scotto and Greg Kelly

Provided by Debbi Haft

Time 1h40m

Number Of Ingredients 7

1 lb thin spaghetti i use ronzoni #9
16 oz shredded cheese usually sharp cheddar and provolognee
1 jar(s) tomato sauce
1 can(s) tomato puree
bread crumbs, seasoned
1/4 stick butter
freshly grated or shredded parmesan cheese

Steps:

  • 1. . Cook spaghetti as usual, and put one layer in greased Pyrex dish 2. Spoon tomato sauce and tomato puree to evenly cover pasta 3. On top of sauce covered pasta, sprinkle half of the shredded cheese. I add fresh grated parm to the cheese mixture and I probably use too much cheese, but we like it cheesy!! 4. Put another layer of pasta on top of the cheese
  • 2. 5. Cover again with sauce and puree 6. Put the remaining cheese mixture on top 7. On top of the cheese spread a thin layer of bread crumbs which will bake into a crust 8. Put thin slices of butter on top of the cheese among the breadcrumbs (4 or 5 pieces of butter) 9. Put the dish in the oven at 350 degrees for about 50 minutes - one hour 10. When the crust forms on the pasta and turns a brownish color, take it out of the oven and let it sit for a few minutes. Have some fresh parm to sprinkle. Eat up!! Definitely not low fat, but delicious!!

GRANDMA JOSIE'S SPAGHETTI SAUCE

GRANDMA JOSIE'S SPAGHETTI SAUCE image

Categories     Pasta

Yield 10-12 servings

Number Of Ingredients 11

3 large onions
8-10 large cloves of garlic
1 industrial-sized can whole Italian plum tomatoes with basil (Can be found at Lotsa Pasta and Costco.)
18 ounces tomato paste
1 cup red wine
lots of fresh basil leaves
6 tablespoons sugar
crushed red pepper to taste
Country-style spareribs or lean pork chops
Meatballs (separate recipe or out of L.P.'s freezer section!)
2 pounds pasta of your choice

Steps:

  • Saute onions and garlic in a really large stockpot (probably at least 8-quarts) over medium-high heat until onions are cooked down considerably, though not blackened. (You'll need to keep checking on them and stirring from time to time.) Give them about 15 minutes. Meanwhile, puree the tomatoes in batches in a food processor, and then run them through a food mill set over a large bowl. (You will be extracting any seeds and skins from the tomatoes.) Add the processed tomatoes to the stockpot. Puree the tomato paste with the basil and the red wine in the food processor. Add some ladles of the more-liquid sauce on the stove to the mixture, in order to incorporate the paste into the sauce. Pour the contents of the processor into the stockpot and stir well. Add salt and pepper, sugar, and crushed red pepper to taste. Turn heat to low and cover partially with the lid of the stockpot. Stir from time to time. (It should barely simmer.) Meanwhile, precook 4-5 country-style spareribs in the microwave, covered with plastic wrap, with just a little water added, for about 10 minutes. (They won't be thoroughly cooked, but you will have extracted a lot of the grease before adding them to the spaghetti sauce.) Holding them with tongs, rinse under tap water, and add to the pot. Prepare the meatballs (separate recipe), and shape them to the size of about a lime. Allow the meatballs and the spareribs to simmer in the sauce for a couple of hours. Stir after the meatballs have had a chance to cook, about 20 minutes, and continue to do so from time to time. Cook the pasta of your choice in another large stockpot until al dente. Drain and ladle just enough of the sauce over the drained pasta in the strainer to keep the pasta from becoming sticky as it cools (2-3 ladles-full). Ladle the servings into individual bowls.

GRANDMA'S BBQ CHICKEN W/ SPAGHETTI

Grandma's BBQ Chicken w/ Spaghetti image

We aren't sure where this recipe came from, but my Grandma Griswold used to make it a lot. It's one of my favorite comfort foods on the planet. It's easy and cheap!

Provided by Ellen McGee

Categories     Chicken

Time 2h

Number Of Ingredients 11

12 Tbsp worcestershire sauce
12 Tbsp vinegar
12 Tbsp brown sugar
1 tsp black pepper
1 tsp salt
3-4 c ketchup
3 onions, yellow, medium
1 green pepper (optional)
a dash of water if needed
2-3 lb chicken (i use thighs...use your favorite part of the chicken)
1 lb thin spaghetti

Steps:

  • 1. Bring everything but chicken to a boil. Pour over chicken. I use a large dutch oven to prevent spills in my oven. Bake, covered, for an hour and a half, or until chicken is cooked through.
  • 2. While this is cooking, prepare pasta according to the package.
  • 3. Remove chicken from sauce and put under the broiler for a few minutes. Serve with sauce and pasta. I often serve the sauce on the side - allowing people to get as much or as little as they'd like. It doesn't need cheese, but you can serve with Parmesan if you'd like.
