Rhubarb is defined as 'the nectar of the gods,' well at least for our family. Long winters are tamed by beautiful springs, and there's no better or more welcome gift from Mother Nature than rhubarb. This is a family favorite and I hope you enjoy it as much as we do.

Time 55m

Yield 12 serving(s)

Number Of Ingredients 8

1 cup sugar
3/4 cup flour, divided
3/4 teaspoon cinnamon
4 cups chopped rhubarb (fresh or frozen)
3/4 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup margarine, melted

Steps:

  • In bowl combine sugar, 1 T flour and cinnamon.
  • Add rhubarb; toss.
  • Place in a greased 9x13 inch baking dish.
  • In bowl combine brown sugar, baking powder, baking soda, and remaining flour; stir in butter.
  • Sprinkle over rhubarb.
  • Bake in preheated 350 degree oven for 40 minutes or until rhubarb is tender.

Tips:

  • For the best flavor, use fresh rhubarb. If you can't find fresh rhubarb, you can use frozen rhubarb, but be sure to thaw it and drain it well before using.
  • If you don't have a food processor, you can use a pastry blender or a fork to mix the flour, sugar, and butter together.
  • If you want a crispier topping, use old-fashioned oats instead of quick-cooking oats.
  • Be sure to preheat your oven before baking the crisp. This will help the crisp to cook evenly.
  • Serve the crisp warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Grandma Donna's Rhubarb Crisp is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and tart filling and crispy oat topping, this crisp is sure to be a hit with everyone who tries it. So next time you have some rhubarb, be sure to give this recipe a try.
