I wanted an on-the-go oatmeal bar without the artificial ingredients of commercial bars. This is the base for the bars, a recipe easily modified to suit your own tastes.

2 cups old-fashioned rolled oats
⅓ cup packed brown sugar
1 tablespoon white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup milk
2 eggs
2 tablespoons canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine oats, brown sugar, white sugar, baking powder, salt, and cinnamon together in a bowl. Whisk milk, eggs, canola oil, and vanilla extract together in a separate bowl. Stir egg mixture into oats mixture until well combined; set aside until flavors blend, about 20 minutes. Spread oats mixture into prepared square pan.
  • Bake in the preheated oven until edges are golden brown, about 30 minutes.

1/2 c dried apples, snipped
1/3 c honey
1/4 c raisins
1 Tbsp brown sugar
1/3 c peanut butter
1/4 c apple butter
1/2 tsp ground cinnamon
1/2 c rolled oats
1/2 c chopped walnuts or pecans
1/3 c toasted wheat germ
1/4 c roasted sunflower seeds
2 c corn flakes and/or wheat flakes

Steps:

  • 1. In a Dutch Oven combine dried apples, honey, raisins and brown sugar; heat and stir until mixture boils. Reduce heat slightly and cook uncovered for one minute, stirring constantly; remove from heat.
  • 2. Stir in peanut butter until melted. Stir in apple butter and cinnamon. Stir in rolled oats, walnuts/pecans, wheat germ and sunflower seeds until well combined. Add cereal, stirring to coat.
  • 3. Press mixture very firmly (or bars will crumble) and evenly into an ungreased 8x8x2 pan; chill to set.
  • 4. Cut into 8 bars. Store in an airtight container for up to 2 days in refrigerator. Good to take on hiking trails.

In a small bowl, beat eggs until foamy. Stir in pecans, coconut and chocolate chips. Spread evenly over crust., Bake at 350° for 30-35 minutes or until edges are golden brown. Cool on a wire rack. Cut into bars. Store in the refrigerator.
