3/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil., Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. 1/2 cup heavy cream
Kosher salt and freshly ground black pepper
Shaved Parmesan and croutons, for topping

  • Bring the broth to a gentle boil in a medium pot over medium-high heat.

2 medium celery ribs, chopped
1 small onion, chopped
1 medium carrot, chopped
3 tablespoons butter
8 cups vegetarian chicken broth
4 cups water
2 (10 ounce) packages dried cheese-filled tortellini (I often use fresh tortellini and adjust the cooking time accordingly)
2 tablespoons chopped fresh parsley
1/2 teaspoon pepper
1 teaspoon freshly grated nutmeg
freshly grated parmesan cheese

Steps:

  • Cover and cook the garlic, celery, onion, and carrot in butter in a large pot over medium-low heat for 10 minutes.
  • Stir in the broth and water. Heat to boiling, and reduce the heat.
  • Stir in the tortellini. Cover and simmer for 20 minutes or until the tortellini is tender, stirring occasionally.

½ teaspoon kosher salt

½ cup dry white wine
4 cups vegetable broth
1 can crushed tomato
1 McCormick® dried bay leaf
1 package cheese tortellini
1 container baby spinach
¼ cup heavy cream
½ cup freshly grated parmesan cheese, for garnish
¼ cup fresh basil leaves, for garnish

Steps:

  • Melt the olive oil and butter together in a Dutch oven over medium heat. Add the onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring occasionally, until the onions are translucent and the garlic is fragrant, about 5 minutes.
