POTATO SAUTE SURPRISE

Potato Saute Surprise image

This very simple recipe invented by my wife, Michelle, is called 'surprise' because I thought 'OK, sauteed potatoes', but then the taste was so much better and out of the ordinary I'm posting it because everyone deserves a chance to try it. The trick about is that everything but the potatoes seems to disappear into background but the flavours are there to surprise you. Peel the tomatoes the easy way. Drop them into boiling water for a 15-20 seconds. Run under cold water until cooled enough to handle then skins should nearly fall off. I hope you enjoy as much as I do, John

GOLDEN POTATO SURPRISE

Categories     Potato     Side

Yield 4-6 servings

Number Of Ingredients 11

4 to 5 medium white potatoes, peeled and diced
2 tablespoons butter
2 medium red onions, chopped
2 tablespoons all-purpose flour
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup half-and-half cream
1/2 cup mayonnaise
1 teaspoon Dijon mustard
4 bacon strips, cooked and crumbled

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and set aside. In large saucepan, melt butter. Saute onions until tender; stir in the flour, thyme, salt and pepper until blended. Gradually add cream. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from the heat; let cool slightly. Stir in the mayonnaise and mustard. Pour sauce over potatoes; transfer to a 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 30 minutes. Just before serving, sprinkle with crumbled bacon.

Tips:

  • Choose the right potatoes. Yukon Gold or Russet potatoes are best for this recipe, as they hold their shape well and have a fluffy texture.
  • Cut the potatoes into uniform pieces. This will help them cook evenly.
  • Season the potatoes well. Use a combination of salt, pepper, garlic powder, and paprika for a classic flavor.
  • Don't overcrowd the pan. Give the potatoes enough space to brown and crisp.
  • Cook the potatoes over medium heat. Be patient and let them cook slowly until they're golden brown and tender.
  • Flip the potatoes halfway through cooking. This will help them brown evenly.
  • Add the cheese and bread crumbs. Once the potatoes are cooked through, stir in the cheese and bread crumbs. Cook for a few more minutes, until the cheese is melted and the bread crumbs are golden brown.
  • Serve immediately. These potatoes are best served hot and fresh out of the pan.

Conclusion:

Golden Potato Surprise is a quick and easy recipe that's perfect for a weeknight meal. It's also a great way to use up leftover mashed potatoes. The crispy potatoes, melted cheese, and crunchy bread crumbs make this dish a hit with everyone. So next time you're looking for a simple but delicious side dish, give Golden Potato Surprise a try.
