3/4 cup light corn syrup
1/2 cup sugar
3 tablespoons butter, melted
1 teaspoon vanilla
3 eggs
1 cup semisweet chocolate chips
1 cup cashew halves
10 whole cashews
1 cup heavy whipping cream
2 tablespoons sugar
2 tablespoons unsweetened baking cocoa

Steps:

  • Heat oven to 325°F. Place pie crust in 9-inch glass pie plate; make a decorative edge on crust.

  • Preheat the oven to 325 degrees F.
  • Grease a 9-inch pie pan and set aside. 1 1/4 cups whole roasted cashews (unsalted)
1/3 cup powdered milk (instant)
1 cup water
1 lemon, zest of, grated
1 small red potatoes, peeled
2 eggs, slightly beaten
1 cup light corn syrup (such as Karo clear red label)
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
9 inches unbaked pie shells (I used a Pillsbury refrigerated)

Steps:

  • Dissolve the powdered milk in the 1 cup of water and set aside.
  • Place pie crust in 9 inch pan and spread the cashews evenly over the bottom of the crust.
  • In a food processor grate the potato until finely chopped adding enough of the reconstituted milk to make it smooth but not very wet; use no less than 2 Tablespoons but no more than 1/4 cup.
  • Grate the the lemon rind and add to the potato mixture, if you peel long strips of zest off the lemon without getting any white on it, you can use the food processor to grate the zest too instead of doing it by hand.
  • Transfer the potato, lemon mixture to a large mixer bowl;.
  • with an electric mixer, beat in the eggs, sugar, syrup, vanilla and salt, beating until smooth.
  • Pour the mixture over the cashews in the pie pan and bake in a preheated 375ºF oven for 40 to 50 minutes or until filling is set.
  • Check pie crust half way through cooking time, if crust is browning to quickly cover the edges of the crust will foil to stop it from getting to brown before the pie is set.
  • Cool thoroughly before cutting, serve plain or with whipped cream or vanilla ice cream.

4 egg yolks
1 1/2 cups (3 sticks) butter, at room temperature
1 1/3 cups sugar
4 egg yolks
2 teaspoons vanilla extract
1/4 teaspoon salt
4 cups all-purpose flour
Food coloring
2 cups sugar
5 whole eggs plus 2 egg yolks
3/4 cup buttermilk
2 tablespoons finely ground cornmeal
1 1/2 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup brown butter, cooled
Nonstick cooking spray
All-purpose flour, for dusting
1 egg, whisked
Dragees, for decorating

Steps:

  • For the crust: In a stand mixer fitted with the paddle attachment, combine the flour, sugar and salt. With the mixer running, drop in the butter and mix until the mixture resembles wet sand. In a small bowl, whisk together the cream and egg yolks, then pour into the mixer and whip until just combined. Turn the dough out onto a clean cutting board and cut in half. Using your hands, gently push each half of dough into a disc and wrap each in plastic wrap. Refrigerate for at least 6 hours or up to overnight.
  • For the cookie dough: In the bowl of a stand mixer fitted with the paddle attachment, beat the butter with the sugar. Beat in the egg yolks one at a time, then add the vanilla and salt. Add the flour, a little at a time, until incorporated. Divide the dough into small batches and color each with food coloring, as desired. Chill the dough for 1 hour before rolling. When ready to decorate the pie, roll the dough to 1/4-inch thick. Use cookie cutters or a knife to cut out shapes for decorating the pie. For the filling: In a large mixing bowl, whisk the sugar, eggs and yolks until the mixture turns a light, golden color. Then whisk in the buttermilk, cornmeal, flour, cinnamon, vanilla and salt. While whisking, slowly drizzle in the browned butter.
  • For the pie: Preheat the oven to 400 degrees F. Spray a 9-inch pie pan with cooking spray. Gently dust a clean work surface with flour, then place a pie dough disk on top and use a rolling pin to roll out the dough into a large circle, about 1/4-inch thick. Transfer the dough to the pie pan, then crimp the edges and prick the dough on the bottom with a docker or fork. Line the crust with parchment paper and fill with pie weights or dried beans to weigh the dough down. Bake until the dough just sets, 8 minutes. Remove the crust from the oven and reduce the oven temperature to 350 degrees F. Working quickly, use a pastry brush to brush the crust with egg wash. Carefully pour the filling into the crust.

1 cup cashews
1/8 cup sugar
1/4 cup light corn syrup
1 teaspoon kosher salt
3/4 teaspoons curry powder
1 tablespoon unsalted butter
3/4 teaspoons baking soda
A candy thermometer
Latex or other food-grade disposable gloves

Steps:

  • Preheat oven to 350°. Lightly coat a silicone baking mat or parchment paper with nonstick spray. Toast cashews on an unlined rimmed baking sheet, tossing once, until just beginning to brown, 5.8 minutes. Let cool.
  • Meanwhile, bring sugar, corn syrup, and 1/4 cup water to a boil in a medium saucepan fitted with a thermometer over medium-high heat, stirring to dissolve sugar. Boil, swirling pan occasionally (at this point, you do not want to stir; doing so could encourage the sugar to crystallize), until thermometer registers 230°.
  • Add salt, curry powder, and cashews and stir, making sure cashews are completely coated and spices are evenly combined. Continue to cook, stirring constantly, until thermometer registers 300° (caramel will be a deep golden brown and cashews will be completely toasted).
  • Remove from heat and carefully stir in butter and baking soda; caramel will bubble and foam.
  • Immediately pour mixture onto prepared baking mat and let cool slightly. Wearing gloves (maybe even two pairs. mixture will be extremely hot), lift up an edge of baking mat and use it to fold mixture onto itself as if you were going to knead it; continue working in this fashion 1 minute. This will distribute the heat and incorporate air, resulting in a thin, crackly consistency.
  • As soon as mixture begins to firm up, stretch out, making it thin in places, but keeping it in one piece. (If today is not your day to sculpt molten sugar, simply pour mixture onto prepared sheet and use a spatula to spread it as thin as you can.) Let cool, then break brittle into uneven pieces, whatever size you like.

3 to 5 tablespoons ice water
For filling:
1 1/4 cups pure maple syrup
6 tablespoons unsalted butter, melted
1 cup (packed) dark brown sugar
1/4 teaspoon kosher salt
3 large eggs
2 tablespoons brandy
3 ounces bittersweet (at least 60% cacao) chocolate, finely chopped
1 1/4 cups unsalted roasted cashews
For serving:
2 (8-ounce) containers crème fraîche
pie weights or dried beans

Steps:

  • Make crust:
  • In food processor, pulse flour and salt until combined. Add butter and pulse just until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Drizzle 3 tablespoons ice water evenly over mixture and pulse or gently stir with fork until incorporated.
