Time 45m

Yield 12 servings

Number Of Ingredients 10

36 slices (1/2-inch thick) baguette bread
3 tablespoons olive oil
8 ounces soft fresh goat cheese
4 ounces cream cheese
2 teaspoons finely chopped fresh Italian parsley leaves
2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely grated lemon peel
Salt and coarsely ground multi-colored or black peppercorns
1/2 cup pitted Sicilian green olives or kalamata olives, finely chopped
2 tablespoons thinly sliced chives

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy large baking sheets. Brush olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
  • Blend the goat cheese and cream cheese in a food processor until smooth and creamy. Add the parsley, thyme, and lemon peel. Using the on/off button, pulse just to blend. Season with salt and pepper, to taste. Spread the cheese mixture over the crostini. Sprinkle with the olives, chives, and more pepper. Arrange the toasts on a platter and serve.
  • Do-Ahead Tip: The crostini and cheese mixture can each be prepared 2 days ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese mixture. Let the cheese mixture stand at room temperature for 1 hour to soften slightly before spreading over the crostini.

Yield Makes 18

Number Of Ingredients 5

1 8-ounce French-bread baguette
8 ounces soft fresh goat cheese
1/4 cup honey
1/2 cup chopped toasted walnuts
1/2 tablespoon chopped fresh rosemary

Steps:

  • Preheat oven to 350°F. Cut eighteen 1/4-inch diagonal slices from baguette. Spread goat cheese on each slice. Arrange in single layer on rimmed baking sheet. Bake until edges are slightly golden and cheese softens, about 10 minutes. Set aside on sheet. Heat honey in small saucepan over medium heat until warm, about 2 minutes. Sprinkle toasts with walnuts, then rosemary. Drizzle with honey and serve.

Tips:

  • Use high-quality goat cheese for the best results. Fresh, creamy goat cheese will melt smoothly and have a delicious tang.
  • If you don't have walnuts on hand, you can use other nuts such as pecans, almonds, or pistachios.
  • Be sure to toast the walnuts before using them. This will bring out their flavor and make them more crunchy.
  • If you don't have honey on hand, you can use another type of sweetener such as maple syrup or agave nectar.
  • Fresh thyme is best for this recipe, but you can use dried thyme if you don't have any fresh on hand.
  • Be careful not to overcrowd the toasts on the baking sheet. Give them enough space so that they can cook evenly.
  • Watch the toasts carefully while they are baking. They can burn easily, so it's important to remove them from the oven as soon as they are golden brown.

Conclusion:

These goat cheese toasts are a delicious and easy appetizer or snack. They're perfect for parties or potlucks, and they're also a great way to use up leftover goat cheese. The combination of tangy goat cheese, sweet honey, crunchy walnuts, and aromatic thyme is irresistible. So next time you're looking for a quick and easy snack, give these goat cheese toasts a try.
