1 1/2 ounces smoked salmon (more if desired)
1/2 ounce goat cheese (about 2 tablespoons)
1 to 2 tablespoons plain yogurt
Several cucumber slices (about 1 1/2 ounces)
A squeeze of lemon
Salt
freshly ground pepper
Chopped chives or dill
2 slices whole-grain sandwich bread, rye bread or a heartier whole-grain country bread

Steps:

  • In a bowl, mash the goat cheese with a fork. Add the yogurt, and mix together until smooth. Spread half on one slice of bread, and top with the smoked salmon. Slice the cucumbers very thin, and layer them over the salmon. If desired, season the cucumbers with a little salt and pepper, and squeeze on some lemon juice. Sprinkle the chopped chives or dill over the cucumbers.
  • Spread the remaining goat cheese mixture over the other piece of bread. Place on top of the cucumbers, press down and cut the sandwich in half.

2 (150 g) salmon fillets (skinless and boneless)
20 g breadcrumbs (1/2 cup fresh made from Italian style bread)
1 tablespoon basil (fresh finely shredded)
1/2 teaspoon lemon zest (finely grated)
250 g baby potatoes (halved and steamed to serve)
1/2 bunch baby carrots (steamed to serve)
1/2 lemon (cut into wedges to serve)
1/2 teaspoon olive oil
1/2 leek (cut into short strips)
1 garlic clove (minced)
1 tablespoon plain flour (wholemeal)
160 ml skim milk (2/3 cup)
20 g goat's cheese
1 tablespoon lemon juice (freshly squeezed)

Steps:

  • Preheat oven to 180C (fan forced).
  • Divide asparagus into 2 bunches and put in a shallow oven proof dish and place a salmon fillet on top of each bunch.

  • Heat 2 tablespoons of the olive oil in a saucepan. Add the onion and garlic, and cook briefly while stirring. Add the wine, capers, rosemary, oregano, pepper flakes, tomatoes, salt, pepper and olives. Bring to a boil and simmer 5 minutes.

2 small leeks (white and pale green parts only), halved, thinly sliced crosswise

1 3.5-ounce package soft fresh goat cheese, room temperature
4 ounces cream cheese, room temperature
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh thyme
2 large eggs
4 ounces thinly sliced smoked salmon
2 tablespoons plain dried breadcrumbs

Steps:

  • Preheat oven to 350°F. Roll out puff pastry on lightly floured surface to 12-inch square. Line 9-inch-diameter tart pan with removable bottom with pastry, cutting off excess at edge. Using fork, pierce dough all over. Freeze pastry 5 minutes. Cover pastry with aluminum foil. Fill with dried beans or pie weights. Bake pastry 15 minutes. Remove weights and foil.   • Preheat oven to 425°F. Heat olive oil in heavy large skillet over medium heat. Add sliced leeks and sauté until soft, about 5 minutes. Add whipping cream and simmer until leek mixture is reduced to 1 1/4 cups, about 5 minutes. Let mixture cool.
  • Using wooden spoon, beat herb cheese, goat cheese, and cream cheese in large bowl until well blended. Stir in leek mixture, then lemon juice and thyme. Season mixture to taste with salt and pepper. Stir in eggs 1 at a time, blending well after each addition.

1/2 cup dry white wine, such as Sauvignon Blanc
1 1/2 tablespoon capers, rinsed
1 tablespoon butter or butter substitute (we use Earth Balance as a butter replacement)
Zest of 1 lemon

1 cup torn or chopped fresh basil leaves
1/2 cup (approximately 3 - 4 ounces) local soft goat cheese in 1/2 inch pieces

  • Heat olive oil in a large sauté pan over medium heat, add bacon and cook until lightly brown. Add leeks and cook until soft. Add wine, turn to high and boil until most of the wine has evaporated. 1 tbls finely chopped red onion
1 tbls drained capers
2 tsp minced fresh dill or 1/4 tsp dillweed
12 3/8" thick diagonally cut French bread baguette slices
olive oil
4 oz goat cheese
3 oz thinly sliced smoked salmon
Fresh dill sprigs

Steps:

  • Preheat oven to 350. Blend first 5 ingredients in small bowl. Arrange bread on baking sheet. Brush lightly with oil. Bake until crisp, about 10 minutes. Cool. Can be made 6 hours ahead. Cover mustard mixture and croutons separately; let stand at room temperature. Spread croutons w/ goat cheese, then mustard mixture. Top with salmon. Garnish with dill, if desired.

1/4 cup fresh dill, chopped
5 ounces soft fresh goat cheese

Steps:

  • Preheat oven to 450.

12 1/2-inch-thick egg bread slices
Fresh arugula or watercress leaves
12 thin lemon slices

Steps:

  • Mix goat cheese, 6 tablespoons minced arugula, 2 tablespoons oil and 2 teaspoons chives in small bowl. Season generously with pepper. Arrange salmon in single layer on large plate. Drizzle 3 tablespoons oil over. Spoon lemon juice over. Sprinkle with 4 tablespoons minced arugula, 4 teaspoons chives and generous amount of pepper. (Can be prepared 4 hours ahead. Cover and refrigerate.)

1 large salmon fillet
1 herbed goat cheese log...approx 6 inches in legth and about 2 inches in diameter
2 Tbsp coarse grain dijon mustrad

Steps:

  • 1. Line a lipped cookie sheet with tin foil. Drizzle a small amount of olive oil on foil. Sprinkle salt on both sides of salmon and rub in. Let sit for a few minutes. Then rinse well with cold water. Dry well with paper towels. Place salmon on the foil, skin side down. Cut slits in the fish flesh at about 2 inch intervals ( do not cut through to the skin). Slice goat cheese into 1/2 - 3/4 inch slices then cut the slices in half. Place the 1/2 moon slices in the slits all across the salmon herb side up.Spread the mustard over top of salmon and cheese. Cover with foil and seal to baking sheet. Place in a 350 oven for 15 - 20 minutes/ Serve hot or at room temperature.

1 c half and half
1 lb fettucine
1/4 lb smoked chinook salmon, chopped

  • 1. Heat 1/4 cup olive oil in heavy large skillet over medium-high heat. Add sliced leeks and sauté until golden and tender, about 10 minutes. Add sliced zucchini and sauté until beginning to soften, about 3 minutes.
  • 2. Add 1 cup half and half and crumbled goat cheese and stir until goat cheese melts. Remove sauce from heat. Season sauce with salt and generous amount of pepper.
