Yield 1 cup, 12 serving(s)

Number Of Ingredients 7

1 garlic clove
1/4 teaspoon kosher salt
5 ounces goat cheese, room temperature
3 tablespoons unsalted butter, room temperature
1/4 cup pistachio nut, shelled, finely chopped
3 tablespoons fresh chives, finely chopped
1 dash ground pepper, to taste

Steps:

  • In a food processor fitted with a metal blade, process the garlic & salt until garlic is finely minced, then add the goat cheese & butter & process until combined & smooth.
  • Scatter nuts & chives over the top, then add a little ground pepper & pulse 2-3 times until combined.
  • Taste & adjust the seasoning, if necessary, then transfer to a serving bowl & ENJOY!

Tips:

  • Choose the right goat cheese. Fresh goat cheese is best for this spread, as it has a mild and creamy flavor. Avoid using aged goat cheese, as it can be too strong and overpowering.
  • Toast the pistachios before using them. This will bring out their flavor and make them more fragrant.
  • Use a good quality olive oil. The olive oil will help to bind the ingredients together and give the spread a smooth and velvety texture.
  • Season the spread to taste. You may want to add a little salt, pepper, or garlic powder, depending on your personal preference.
  • Chill the spread before serving. This will help it to firm up and make it easier to spread.

Conclusion:

Goat cheese and pistachio spread is a delicious and versatile appetizer that can be enjoyed on crackers, bread, or vegetables. It is also a great way to use up leftover goat cheese. With its creamy texture and nutty flavor, this spread is sure to be a hit at your next party or gathering.
